I honestly really enjoyed Sonic Frontiers. But those S rank times were all over the place. I managed to get them all, but there was one on the first island that must have taken me 30+ tries and you had to be absolutely frame perfect. I was having to use tricks to shave a fraction of a second just to get the S. I remember there being a pipe to grind on where it was slightly faster to skip hitting the spring so you wouldn't go into the spring jump animation. Think it was the "I'm going baton" music level.
