Sculpting gluten-free flat bread is fun if you think of it as play dough shaping! Tip: Some flours take hot water while some room temperature. For making Jowar Rotla, boiling water is used while making bajra rotla, regular room temperature water is used. So get to know your flours before starting.
Another, tip is to use dry flour or water to sculpt Rotla. Some prefer to use dry flour to make sculpting easier, while some use water, specially if the dough is firm, it needs to be hydrated to seal the cracks. As you start making, you will come to know.

Sculpting a perfect Rotla - a rustic flatbread made using any of the millets. As millets are gluten free it is difficult to roll the breads made using only millet flour. In Gujarat the widely used millets are Bajra and Jowar, both specific to particular regions of Gujarat. Since it is practically impossible to roll the millet breads using rolling pins they are sculpted effortlessly (by those who have mastered this skill) by hands. If made proportional each Rotla is evenly shaped and balloons up like a Pita giving us a perfect pocket called -khapoti…. Rotla (thick flatbread )and Rotli (paper thin flatbreads)are the everyday breads in rural and urban Gujarati household. The rural households comprising mostly of farmer prefer Rotla millets are cheaper and provides more energy while urban house hold prefer Rotli that is made with whole wheat flour.

Rotla is my favorite 🤩❤️❤️. I love that it’s gluten free, much better for digestion and way more nutritious than wheat flour roti 😃💖💖🫓

Those in the beginning is Quinoa, I don’t have whole jowar but I have flour only. But nowadays, I spot whole grains like Jowar in Indian grocery

I love to eat rotalas. Does it sometimes depends if the flour is too old, they become difficult to roll? I’ve heard from some people but thought i can confirm with you the expert.

Yes, old flour takes more water and if not stored properly, gets spoiled as well, don’t taste good and may make hard to roll as well. So where I grew up Jowar bajra flour was milled fresh every week

This is a pain in the head for me...but definitely try again if I found fresh flour from the store...My mom used to make juwar's rotla from fresh flour...will see...

Did you know.. Using baking/parchment sheets instead of the plastic sheets is healthier option.

Yes, I do that too. Sometimes I use parchment but now I use silicone actually so reusable. This video part with plastic was done years ago and I should have done new video for that part but... well. Thanks though for pointing that out so others can follow
