My husband and I have lived in the Philippines for the past 4 years. It makes my heart so happy to see you enjoy the delicious Filipino foods and appreciate the culture. Some foods I think you should try next are the following. All are super yummy! Tortang talong is a Filipino eggplant omelet , Shrimp or pork Sinangag soup flavored with tamarind, Beef Bulalo soup, Kare Kare a Ox tail and tripe Filipino stew flavored in a savory peanut sauce, Ginataang Kalabasa, Sitaw at Hipon is a Filipino vegetable stew made with kabocha squash, shrimp, and long green beans cooked in coconut milk. It's creamy, spicy, and delicious with steamed rice, Filipino BBQ grilled chicken or pork on wooden skewers over a fire , Tokneneng are boiled chicken eggs that are dipped in a reddish batter and deep-fried until the batter becomes crispy. I look forward to seeing you try new Filipino foods.

For the desserts / drinks : mango float, halo halo ( a lot of foreigners don’t know how to eat this dessert, but before you eat this dessert you need to mix everything first) and flavored milk teas ( it’s very popular there, now). When the Spanish colonised the Philippines, they brought over lots of Mexicans. I've heard that the Filipino language is more similar to Mexican Spanish than to native/mainland Spanish. Big Guy, thank you for showing so much love to Filipino food (and your pronunciation is pretty spot on). Although I am half Filipino, I don't get the chance to eat much Filipino food. As you said, it is such an underrated cuisine outside of the Philippines. Between my mum and I we actually jokingly call tiramisu, tira-ni-sue (it sounds like "Sue's leftovers" in Filipino). Of course, we would never call it that at a cafe or restaurant.
