Fun fact those instant pudding mixes work in a similar way, but the corn starch has been "pre-bloomed" aka hydrated so the strands unfold and then re-dried. That way you don't need to heat them to get that thickening action! Neat.

The best part is that he served it wrong. You're supposed to take another plate, put it on top of the pan it was cooked in, and then flip the whole thing upside down before removing the pan it was cooked in, so that the sauce on the bottom of the cook pan drizzles over the top.

As an Australian myself, I can vouch for just how good Chocolate Sauce Pudding is. Also works well as a Butterscotch Sauce Pudding too. Serve both with custard and either ice cream or whipped cream. Delicious. Desserts of my childhood that Mum used to make, and still occasionally makes to this day 😊

I also have a microwave version of the recipe! It's one of the few times where cooking in a microwave is totally valid, because microwave cooking always produces a steamy half-baked lump of goo and that just so happens to be exactly what you want here.

Here in Canada, we actually have a somewhat similar dish to the Australian Chocolate Pudding, called "Pouding Chomeur" or "Unemployment Pudding". It's basically a very simple cake batter that we then pour a sauce made of maple syrup and sugar over top of before baking it so you can cake with a maple caramel underneath!

There’s also a “Brazilian pudding” which is called “Brigadeiro”, it is the shit, and stupid easy to make, it goes one can of condensed milk, 4 spoons of chocolate powder (other powers works just as well, like strawberry for an example) and one spoon of butter, where you toss that into a pan, stir well (you can use a whisker but a wooden spoon like instrument works just as well) in medium heat, until it bubbles like hell and you can scrape the bottom until the mass takes a while to form back into the bottom of the pan, serve it hot or cold, your call
