Okonomiyaki, a dish whose name literally means "how you like", can contain any number of fillings. But as depicted in Sweetness & Lightning, it can contain a great deal more: childlike wonder, paternal bonding, and squid. Follow along this week as we recreate this essential Japanese comfort food, and maybe learn a thing or two about growing up in the process.

About the ginger, I think you used the pink ginger, Gari (ガリ), which goes with sushi with the sweeter taste. The one to go with okonomiyaki is called Beni-shouga (紅しょうが), means red ginger, with less sweet and very tangy.

If an anime _does_ create a Babish character, it will have to be done so you never see him from the neck up. The twist is when the camera _does_ pan up, he has no head. The "headless 3 course man" so to speak.

Honestly Okonomiyaki isn’t that hard. He did the traditional version but there are much more modern versions with less/more common ingredients that still taste 100% amazing the hardest part of making it is the flip which there are ways around that as well. Good luck in the kitchen!

I had an okonomiyaki in Hiroshima and it was a bit different to this. It was a place with a large griddle. The customers sat around it. They first poured some of the mixture (only the liquid, no cabbage) on the surface. Then they added powder and cabbage, some ingredients you chose (like pork belly) and then poured more of the mixture on it. Then they flipped it a couple of times and voila! It was amazing. It was so crunchy they gave you a metallic spatula to cut it.

(adjusts spectacles) Point of order: it looks like you're using gari, the sweet, soft pickled ginger that accompanies sushi. It's my understanding that okonomiyaki calls for beni shōga, the crisper, tarter, brighter red strips pickled in umeboshi solution.

The food from the street vendors in Spirited Away, Ponyo's ham noodles (although he's already done a few ramen episodes), the breakfast from Howl's Moving Castle, herring pie from Kiki, Totoro bento boxes, salmon from Porco Rosso... what else is there? It seems like a lot of Miyazaki's foods look really amazing, but they're just simple recipes animated gorgeously. I guess Spirited Away has the widest variety of material to work with. Zeniba has quite the spread of sweets, and Lin and Sen eat those cool bean dumpling things. Plus, all that shit her parents inhale.

There was a street vendor in Okinawa who sold some similar ones to that near the base I was stationed at in the Marines. Tasty but we referred to them as ass blasters. Anyone wanting to win a fart war in the barracks for volume, duration and fragrance would have to go out and scarf one of those down. There was another small roll up door shop right outside the main gate that sold fried rice dishes and yakisoba. And I mix in my cabbage, leeks, shrimp(chopped into smaller pieces) and crab sticks (surimi) that I cut into long strips.
