Black IPA First Attempt on BrewZilla Gen 4

Here Andrew aka Gandy creates a Black IPA recipe and brews it on our BrewZilla Gen 4 35L home brewing system. Results are mixed but promising with various areas we can work on. It appears to be a style that's fairly hard to nail as the key is balancing the hoppy IPA character with the smooth chocolate, caramel and coffee notes of dark malt but without the harshness. We will brew another soon!

Ca 100 - Mg 18 - Na 53 - SO4 93 - Cl 135
-Grain Bill:
Maris Otter 5000g
Crystal Rye Malt 500g
Midnight Wheat Malt 500g
Flaked Barley 450g
Malted Rye 450g
Vienna Malt 450g
-Mash:
Strike water 26L at 70°C
60 minutes at 65°C
Mash out 10 minutes at 75°C
-Boil:
Pre-boil volume 26L
60 minutes
Galaxy 31g @ 60 mins
-Dry Hop (after active fermentation):
Galaxy 200g
-Yeast:
WHC Saturated 31g (401 billion cells)

Probably not an IPA but the Germans do a rather toothsome black beer in Frankfurt. On a football trip to play our German office (1-1 result) we were taken out the night before by this very pretty secretary who got us all completely leathered on this black stuff. Needless to say, we were all up all night with something on the wrong side of dysentery (a post-Vindaloo dump was akin to a mild Korma in comparison). The young lady was nowhere to be seen the next day at the match, despite offering to be our mascot, which saved her from a significant tongue lashing from my good self. Our 1-all draw was a fair result on the day as we were slightly diminished in our stamina. Our half-time litre of beer each was probably also a bad idea as it was some of that gassy Bitberger stuff and we were too scared to partake in any relief-giving farts due to obvious fear of significant follow-through. Anyway, it will surprise no one that we went out that night for some post-match drinkies to the same bar and got pissed on the same stuff. Gave me a bunghole like a horses collar for the next couple of weeks, but just laying off the chilli sauce on the evening kebab was the only required remedy. Lost about a quarter of my body weight,but hey-ho … teaches you a thing about life.

A bunghole like a horse’s collar 😂😂 oh blimey! And the last line….from the ‘buggered me senseless’ guy in Four Weddings and a Funeral clearly 😂 Had a similar experience in Czech Republic on dark Krusovice. Great stuff that 🍺

Well done on tackling the black magic of this style! Something I've not yet got around to but want to. I'd model mine on the fine examples I've had which include Elusive's Shadow Of The Beast (Cascade, Mosaic, Citra) and Arbor Ales' SMAC In Black (Simcoe, Mosaic, Amarillo, Citra). Although I'd probably throw in plenty of Simcoe, El Dorado maybe Eureka. I like the addition of midnight wheat for the double whammy of mouthfeel & less astringency I might have to steal that idea ;)

Yeah Gandy was spot on with the midnight wheat although it clearly made it murky (no big deal at all). I think all this needs is a tweak to the hops and bitterness and it’ll be 👌 Cheers amigo 🍺

WHC labs yeasts are very good! Having some great success also with them lately.

Yeah one of our favourites. Really like Saturated and Bond. Like the look of the new mango and banana yeasts too so will be trying them soon 🍺

Check out ep80 on the hop addition with Elusive Andy Parker. He gave us loads of good advice on black IPAs. One thing he likes to do is have a resinous hop like centennial and a citrus hop like Citra and pair it like that.

Call it a "Cascadian Dark Ale" -- less oxymoronic. :) My favorite CDA is Bad Santa from Pelican Brewing, and Bell's did a great experimental one recently.

Brilliant. We touched on this the other day. I’ve brewed a few and never understood the style, though it was a IPA that’s dark but tastes like a IPA that messes with your head. Some folk say it should be a bit roasty ?. My first one I put dark malts in at the start of the mash no idea what style that was ? Then after brewing a few I ended up putting the dark malts in the mash only for the last ten minutes. I’m still confused so gave up but may have another go after seeing this. I think this brew was all about the comedy rather than the beer 😂 did you have the PID setting on when you brewed? I’ve used my gen 4 about 3 times now and does take a little time to hit temperature for the boil. I’ve also paired it with the rapt thermometer and once the two temp probs are synced it holds temp very well. The top screen I only use for the sparge but I do find it takes along time to drain but that could be me doing something wrong or a really compact grain bed😅 great vlog as always 👍 cheers 🍻
