This is probably the only tutorial that helps you with anime eye material on a flat surface (Other tutorials do it on a sphere). But I thought it would be using one material. Guess it's better to draw a texture in the end.

That's a cool way of doing it. I could see some interesting ways to track light sources in a scene and make detailed eyes from them. Seeing these overly detailed eyes always breaks my immersion, the bright spots are eyeball reflections of light sources in the environment. 9/9 the light is not there.

I'm new to Blender - what is the benefit of doing this vs just texturing the eye? Seems like texturing would be faster.

texturing is faster in the first attempt but procedural you can reuse the same material and change colors on the fly for different characters.

if you go the Hand-Painted way... you will probably make a Gradient Map... Advantage of Procedure is that you don't have to Jump Between Softwares making the Process more Streamline and Faster... (Since Opening and Reloading Textures takes some time...) The Issue about Procedure Methods it that it is Very hard to get "good" Results without Spending Some Time Learning how to do so... and Simply Drawing it is "better" in most Cases... if you take the Hand Draw Approach you can probably make a Stamp (Dedicateed Pen), that Does the Eye Shape 4 you... in CSP it is Popular to see Eyes Stamps in the Shop... You can Easily Change the Eye Color by Hue Shifting or Turning into Black and White... and using Gradient Mapping as Color Changing... issue about Gradient Mapping is that its a Style to get more Realistic Results.... but that doesn't mean you can't use it for more Stylise Results but it Requires more Knowledge how "Values" work...
