INGREDIENTS (Makes 13 50 g mooncakes)
*volume measurements are just here for reference but I HIGHLY recommend measuring based on weight for more accurate results
⇒ Butterfly Pea Flower Tea:
1/2 tbsp butterfly pea flowers (use more or less to change the intensity of the snow skin colour)
55 g (1/4 cup) hot water
⇒ Snow Skin:
40 g (1/3 cup) glutinous rice flour
40 g (1/3 cup) rice flour
20 g (1 1/2 tbsp) wheat starch
45 g (1/2 cup) icing sugar
50 g (1/4 cup) butterfly pea flower tea
85 g (1/3 cup) milk
20 g (1 tbsp) sweetened condensed milk
30 g (2 tbsp) flavourless oil
⇒ Filling:
90 g (about 3/4 cup) dried white lotus seeds (about 200g after soaking)
100 g (½ cup) water
60 g (1/4 cup) white sugar
20 g (2 tbsp) maltose (substitutable by honey but reduce it since maltose is less sweet)
50 g (1/4 cup) flavourless oil
Pinch of salt
80 g (1/4 cup) blueberry jam
⇒ Cooked Glutinous Rice Flour:
30 g (1/4 cup) glutinous rice flour

Watched this video too many times last week debating whether to give it a go. Had never heard of mooncakes before. Ordered everything from Amazon. Soaked the lotus this morning. Drove 8 hrs today for an engagement. Got home. Made the first ‘overnight’ round. It’s resting in the fridge to be assembled tomorrow. Phew!

Thanks for the ping pi moon cake recipe. I had the blue butterfly flower at my garden just pick some fresh flower soak with hot water for a beautiful blue natural colour and I will do some with macha powder as well...cant wait to try making it with my family. You are a great baker, Jasma! I have watched your tutorial ever since I started watching on KZbin. You make it very easy to follow. Thank you and keep sharing your special talents. I lived in Bangkok, Thailand for 3 years and every time it's Mooncake Festival, I go to their high end hotels and they sell the best FRESH mooncake (white exterior) color. I loved the green tea and pandan flavor. I don't mind the Durian flavor. I watched your tutorial for the first time, I was so happy to watch your techniques.

Interesting combination. I'm quite curious to taste how blueberry and lotus paste goes together. I also wonder if it can be tweeked to be a vegetarian/vegan option Honestly, at the beginning i have thought it was going to be a blueberry creamcheese mooncake instead 😝.. the was a hotel's blieberry cream cheese mooncake i've tasted quite a number of years ago.

Jasma, just recently subscribed to your channel and loved your videos and recipes. And love the way you explain. Question: instead of wheat starch, can tapioca starch be used ? oooh that's a good question, I've never frozen my mooncakes before I assume the texture might change a bit...maybe try it with a small batch first and see if you like the result?

Have you tried making a keto moon cake using almond flour as a replacement for the rice flour? What kind of milk do you use? Can I use Almond Milk or Oat Milk? What flavorless oil brand do you use?

hi jasma! i just tried your black sesame walnut snowy mooncakes today and they turned out soooooo good! i was wondering for the blue color of this mooncake, would it be okay to use blue food coloring with the same amount of water listed in the recipe instead of dried tea?

Yes, absolutely! I like to introduce natural colouring options but regular food colouring does the trick too. I'd recommend adding it after the skin is cooked to have a better grasp of what shade of blue you're achieving since the colour looks much lighter before steaming.

@@JasmaFusionCuisine if you do try using the butterfly pea tea option you can produce 2 colours from the same batch just by adding a few drops of lemon juice. The colour will change to a pinky/purple. Applied Chemistry is so much fun in the kitchen. As a side note: Jasma, your presentation and your production values are quite professional. Congratulations on producing such excellent work. Are you looking to a professional career in media?

I believe it's possible. However, the texture will most likely be quite different compared to freshly consumed mooncake.
