We made them! They came out fantastic! Almost every single luchi puffed! And they were super flaky! Honestly the best batch I’ve ever made! (I’ve made them many times but never had such an exact and clear recipe with measurements. I used my food scale and the measures were so accurate! My physicist Bengali husband (right there a synonym for “fuss budget”) was truly impressed! I have photos!

I want to thank Bong Eats for saving my soul which is stranded in the UK amidst this pandemic. I made this for dinner today and this time I followed all the measurements and the luchi not only puffed up but it just melted in my mouth. This is the first time my attempt at making luchi has been successful! :) I also made the street style alur torkari with chickpea to accompany the delightful luchi. Thank you for bringing my country closer to me amidst all this.

If someone is interested: we had difficulties to roll the dough as thinly as it (probably) should be so I used the classic pasta machine. I started at the mark 4 and proceeded to 2 or 1 in order to obtain a round shape. The thinnest pieces (mark 1) became very crunchy but didn't puff up. The slightly thicker pieces (mark 2) became almost perfect luchi.

Rolling the perfect luchi certainly is a skill and I was fortunate to learn it from good teachers. I don’t know how long it would have taken if I were on my own. Also there is a tortilla maker that I wonder about. Have you seen those? It’s just a simple flattening device but highly effective.

There might be multiple gadgets that can make the dough flatten to the desired shape...however, I recommend using the rolling pin... Once muscle memory develops, it is actually faster 😃

Your rolling instructions are absolutely amazing. Yesterday I tried luchi for only second time, followed your rolling instructions, and it was perfectly round and thick. As if I have made luchis many times. Thank you so much for sharing this recipe which was very easy for the beginners to follow.

Begun Bhaja. Or Mangsher Jhhol. On another note: my mother watched this and said "Beshi moyan diye phelechhe, tel chhara belte parbe na ar edge gulo ektu mota hobe". Her tip is: use less oil and water for the dough but add it *as you knead*. She says that way they come out thinner and you don't need oil to roll. Now I have no idea about the veracity of these claims but I do know that her luchis are superb (though she claims they're not as good as her mother's....) ;)

Wonderful videos! As an amateur cook living away from home, I now have the confidence to venture into the world of Bengali cooking, because of the way you breakdown even the most complicated recipes. Just one very small suggestion- as a beginner, sometimes I find it difficult to figure out what degree of flame or heat to use, for the different types of frying, braising etc. While some of your videos mention it, some don’t. It would be helpful for amateurs like me! Keep up the amazing work :)

Hey, thanks for this wonderful video. I have minimum experience with cooking, started during pandemic, and I love your videos. But, I am having a hard time understanding how hot my flame should be. I understand, I need to reach smoking point first. But, then do I lower my flame. From the fizz produced when you put the luchi in. It seems the flame is low. Please can you confirm.

I have tried this recipe several times, and it was reach a better texture when I add 10 grams more water and reduce 1 gram salt.

I have been trying this luchi for sometime on an Induction stove.. unfortunately none of the attempts even came as near.. While i reckon the dough mix was almost as suggested .. has it got anything to do with the oil temperature.. Does the max temp attained in an Induction insufficient to give this "phulko luchi".. Should you have any suggestions please provide.... Bong Eats rocks!!!! and love to appreciate your project management skills put to every video...

The more I watch your videos, the more I get enticed by it. The videography and the detailing is amazing! Just like those fancy channels showing food in an articulate way. Most of the bengali/Indian recipes found on youtube are a bit chaotic if I may say so...but to present it in this way looks appealing while retaining it's simplicity. Good job guys! I can finally recommend a good channel like yours to my friends who want to know about bengali cuisine. :D

Became a fan of your videos. This one with its background score is perfect.I have never seen so clean, professional videos on Bengali recipes and your measurements are awesome. Many Bengalis do not understand the necessity of standardisation and they prefer the trial and error method. Whats so wrong about standardisation, I wonder! I have shared your video on Facebook. BTW, though the background score for this one is fabulous, why don't you experiment with similar stuff for your other videos? mostly you have repeated the background music - which is sort of boring... :D You can produce excellent results there. Good audio visuals have special impacts too. All the best.

Love all your demonstrations it’s my addiction. On this one the tip of rolling out the pastry between two sheets of parchment paper is excellent. Well done for your beautiful videos they are a joy to watch and the recipes are lovely, my cooking has certainly has been enhanced.

Tried it today morning and messed up with the quantity of oil while making the dough :-( Gave a bit too much and the luchi turned out to be brittle...'moyan' beshi hoe geche...alas, ultimate luchi still eludes me...*sigh* !

Sorry to hear that, Abhishek. If possible use the exact weights given? Also, make sure the oil is very hot (195-200 degree C). Luchi requires hotter oil than other deep fried food. All the best!

Nice demonstration of making Luchis, only one advice is that most of us use spoons or cups to calculate instead of grams so its helpful if the common household standards of measuring are used so as for the benefit of the common people..Thanks!

I stay in Italy and work as a researcher here. From today morning I am hung on to your videos, such beautiful presentation, Bong music on some of the videos, I just want to go home now :( I watched Egg roll in the morning and now I am really craving for one :D I just want to thank you for portraying our dishes so well. Ha ha. All the best to you. We highly recommend getting a weighing scale for breads and such. Makes life easier. It is also easier to rectify a recipe the second time if you know the weights of ingredients used the first time. Thank you for the lovely note.

Banie diechi luchi :D Amar kache chilo weighing scale, ekekta lechi ekdom mepe ojon korechi :D Ebar onek better hoeche. Bhajar somoi fulechilo, mone hoi belar somoi ektu mota roye gechilo, should have rolled it thinner then it would have been persistent. Amar tomader jonyo QA video te ekta question roilo, "Are 1 or both of you engineers? :D" I love the impeccable measurements and planning that you put in. No wonder it takes 40 hours, but it is incredible. I have sent many of my friends these videos, who are not Indians and they have been amazed by your presentation as well. So kudos!! :)
