I'm Afghan and potatoes are the way to go I've never mixed it with tomatoes. just fried potatoes onion and peppers with cilantro I grew up eating that

Im surprised that other afghans in the comments don't eat eggs like this. I was just going to suggest that the potatoes are supposed to fry until the skin gets cooked first before adding in the other ingredients, otherwise everything else's turn to mush by the time they get cooked. And the onions should fully turn golden brown before adding in tomatoes or they won't crisp properly.

this looks similar to shakshouka but it also looks different enough to be its own dish inspired by it. The concept of adding the eggs at the end is fairly clever. I do believe shakshouka has about 15 seperate recipes that all stem from 1 base recipe. as is common with provincial recipes. I'll have to give this a try though.

An Egyptian friend's mom made me have omelet and tomatoes, thn another friend made me have omelet with potatoes so finally i prepared omelet with potatoes, tomatoes and onion with scrambled eggs but have never placed eggs in such a manner. Great!!!
