Just add eggs to 1 tomato! Quick breakfast in 5 minutes. Simple and delicious
Ingredients and recipe:
3 eggs
salt
Black pepper
Crushed red pepper
Mix well
100g green onion
Chop
Add to the egg
Mix well
Medium-low heat
1tbsp unsalted butter
1 tomato
Slice
Place the tomato slices in the pan
Pour the egg in the pan
Mozzarella cheese
Cook for 3-5 minutes
Done!

Frittata adds heavy cream to the egg. Also no flour. The heavy cream with the egg rises and give it some fluff after putting in oven to finish. Frittata’s are my favorite way to use left overs.

A frittata does not have flour or heavy cream..lol. I suppose you could add some heavy cream to it but it would make it too fluffy like milk and break. I have not had any issues making a frittata without though.

And you a little spinach to that, and a little ham or bacon, and that would be the perfect omelette. One question though I don’t understand why you use unsalted butter if you’re going to salt the tomatoes. Why not just use salted butter and no salt on the tomatoes since you already have salt in the eggs just wondering.

I cooked a lot of that before. Just not into it too much. You can cook tomatoes with beef and green onions too. Just add whatever you like into it.

I made this just now, only using l parmesan cheese, as I did not have mozzarella cheese. Super simple, and delicious! Next time I make it, I’m going to flip it over onto the plate so that the tomatoes show on top, for eye appeal. Great recipe!

This was really good! And easy too! Didn't have green onions so I sauteed some shallot and mushroom and sage then added it to the egg mix. Lots of room to experiment here. Can hardly wait for the tomatoes in the garden to ripen for really good tom flavor too. Thanks for this quick solution to healthy meal.
