Bread is a basic, daily food in our diet, but there are people who are allergic to gluten or, for example, diabetics, who avoid white flour. But it is difficult to find a DELICIOUS bread, without a trace of gluten...and it will be very expensive in the market.
Fermentation is done only with the live grains, we need uncooked buckwheat and not processed.
For a loaf ~800 gr. we need these materials and times:
• 500 gr. raw buckwheat dry
• 150 gr. water
• 15 gr. salt
• 15 gr. sugar or honey
Optionally from 1/2 tsp. coriander and garlic
Baking: in a preheated oven
• 200 degrees - 20 minutes
• 180 degrees - 40 minutes
• in a closed oven - 1 hour
Let it cool very well - 8 hours. I wrap such breads in a towel, so that they cool and at the same time do not dry out.

1. When the buckwheat swells, a very good rinse
2. Beat well until the mixture becomes homogeneous
3. We watch the dough rise to 50%

5. Let it cool down very well, before cutting it
