This is the best nutrition talk I’ve ever heard! I’m about to graduate as a nurse (in Sweden) and we’ve learned a lot about nutrition (not enough though) and how to read studies etc, but I’ve never heard a more clear, detailed and nuanced description of the data we actually have on healthy (and not so healthy) dietary patterns and the mechanisms behind certain outcomes related to them. Loved this ❤

That would never happen haha because Kori's hypothesis is not based in science... She subscribes to the "internet diet fad" that Simon mentions, which totally clashes with the actual medical science. It's alis talk. I think the Ray peat/Weston A Price fad will disappear (hopefully, as it will save a lot of people) eventually. Just like the keto and carnivore crazies.

I absolutely loved this episode! I’m not sure I agreed with everything he said..but I appreciate his approach of trying to look at the science honestly. That’s why conversations like this are important, the opinions are always changing but I think he at least got to some core truth about diet.

Thankyou. This for me was incredibly enlightening. As someone who has been majority plant based for 7+ years but still experienced health issues, and finding the insane amount of claims out there on what ‘healthy’ is so deeply ungrounding as it’s SO difficult to discern what’s good and what’s not. I found this really helpful and I guess reassuring that I’m on the right path. It’s refreshing to have someone not just pushing on one diet, just laying out the facts! Love your podcast Ellen, always my go-to. 🪷✨🌸 Would love to hear about how our mental and emotional attitude relates to health, as I feel this is sooo relative!

I'm just know hearing this podcast as Simon Hill is just getting around to putting it up on his channel. Thanks for taking the time to take up this topic and clear up some confusion. Your questions were valid and intelligent and Simon is one of the most open minded science based researches out there. I mean what vegan is going to say "you can eat animal products in a healthy way". This also has made me curious at to what your podcast is about and I might be check out more episodes.

Would like to hear two opposing views especially two based on research. But here is few thoughts based on the intro: We live longer due to modern medicine. We are not healthier than our ancestors . Research is biased depending on the funding source.

I follow a diet of Native Americans where sugar, flour, plant milk, all this genetic modified green and fruits did not exist. They were strong, cavity free, diabetes free, cancer free people. One has to seek their own salvation as far as a diet is concerned. If the plant diet is working for someone, by all means keep on doing it, Just keep in mind however, that we are all different and based on that, one needs to eat what is best for their body.

I love your podcasts! I'm always looking forward to them! This is one of my favs thus far! 😊 Ive been around since the beginning, Ellen. I love seeing you and your family flourish. You're one of the few youtubers that haven't changed all too much when it comes to diet & lifestyle which is nice. Yes, you've transitioned away from being raw, but your diet is still whole-food based and I love it. I always know it'll be a good watch/listen when I come to your podcast or channel. It would have been nice to have him speak more about his view on seeds oils and how they oxidate with heat and become very inflammatory. That's pretty well documented now! I'm a skin health nutritionist, and when my clients remove most seed oils from their diet (like in plant based milks like oat barista milks, deep fried foods and in mayo) their skin improves drastically just from these shifts. Through all my research it appears that ultimately the best two oils to cook with are extra virgin olive oil, and ghee. Seed oils just shouldn't be used for cooking, period.

It's added sugar that is the problem. Also, people overestimate the amount of sugar in fruit. It goes as low as 5%.

I appreciate the conversation but I am still conflicted on the fact that every civilization in all times in history has consumed some kind of animal products. Some not as much dairy but at least bone broth and even moderate meat. Of course with lots of veggies and fruit too. I’m not saying, like most, that we “have to be like our ancestors” but if we have research on entire civilizations and what they ate, why mess with what we know to be wise? Just my opinion 😅

Ancestral diets featured much leaner, unprocessed meats that aren't comparable to today's factory-farmed versions, and it's also worth considering that our ancestors were far more active, and also still ate a wide variety of plants. They ate to survive (long enough to procreate), and their diets varied considerably by region. These weren't necessarily designed for longevity since their lifespans were shorter. In contrast, today's circumstances are very different: we're living longer but suffering "diseases of affluence," eating unnatural, refined, ultra-processed foods (or certain animal products that no longer resemble what our ancestors ate), moving less, spending too much time indoors glued to screens, drinking & snacking more. It's important not to romanticize ancestral diets, but to let evolving science guide us. This video did NOT suggest that people should go vegan. Rather, Simon pointed out that there's room for animal products, in particular seafood and some dairy (10-15% of one's diet), but that it's also possible to be healthy on a well-planned vegan diet. He also mentioned a lack of scientific evidence (either way, pro or con) regarding bone broth (if I remember that correctly?), and also indicated that the Mediterranean diet is superior in that it features a generous assortment of plant foods, whole grains, healthy plant oils, and some seafood & lean meat. We should always consider what we eat within the greater context of our overall diet (and lifestyle), instead of fixating on (either glorifying or demonizing) specific food groups. There's too much near-religious dogma surrounding diets - whether vegan or carnivore. It seems that people get so emotionally connected to their way of eating, that any new science ("inconvenient truth") challenges their very identities, but this isn't how we should approach the fuel that so significantly impacts our health. I recently discovered Simon Hill (after purchasing his "The Proof is in the Plants" book) and am blown away by the depth & breadth of his knowledge. After years spent researching nutrition myself as a mere layperson (and often banging my head against the wall in frustration!), it's so refreshing to have finally come across someone truly unbiased, who has drilled down into the science for the sole purpose of finding objective truth and not merely extract cherry-picked data that supports a specific agenda. It can't be an easy job, especially as an outlier who doesn't fit neatly into any one diet "camp." He must have a pretty thick skin!

@@Beaners386 edible plants didn't exist until agriculture began, none of the plants we eat could survive in nature without humans tilling the soil, fertilizing it, spraying it with pesticides etc. Humans can't eat and derive nutrition from grass like we can with wheat.

@@purebloodsunite7489 Of course there were plants everywhere 2 million years ago! I live in the tropics where our ancestors originated and I can forage native plants everywhere in my country. Remember too, there are fruits everywhere here too. Even in the northern regions of the world you have wild rice, nuts, and berries, and other plant foods that we don't have here. Plants for agriculture 10,000 years ago did not fall from the sky.

I would personally avoid coconut oil. Coconut oil raises both "bad" and "good" cholesterol, but modern research indicates that "good" cholesterol is not as good as people thought it was.

Coconut and palm oil have a negative influence on ApoB. however, chocolate (dark) seems to be the exception having no effect at all. stearic acid from its SFA compounds

Each of us is a study of 1. I can’t eat grains or more than a serving of fruit a day related to inflammation issues. High carb intake hurts me :( A keto/Mediterranean style diet works for me. I’m willing to change it up though as my body allows.

I will never be a carnivore, and I do not follow carnivore sites or channels, so this question may have been discussed among carnivores. Outside of the possibility of Vitamin A toxicity, the liver is a vital organ, one of whose purposes is to prevent harm to our bodies from toxins. Toxins can accumulate in the liver I would think. Therefore, would not the liver cause ingestion of these toxins and be harmful?

Personally been keto for a few years now carnivore for 90 days. I would recommend everyone try the carnivore diet and decide for yourself. Based on my experience I can say, for me, I am absolutely designed to eat muscle meat / fat of large ruminant animals.

Our ancestors diet (which always had animal products) is what we need (meat and animal products) because that is what our bodies adapted to. We have a species specific diet and you don’t change that to try and live longer. You eat exactly that to live longer. Take a lion or wolf and change his diet to make them live longer…crazy right

This viewpoint is untrue. Saturated fat does not increase visceral fat. These studies have long been disproved. There are plenty of people including myself on a carnivore diet who have lost body fat (incl visceral) while building lean muscle. I also reversed fatty liver and lowered LDL. I was plant based for 7 years and just continued to gain weight and raise my cholesterol 🤷‍♀️

That’s your antidote. There is absolute correlation between high saturated fat intake and increased LDL. I’d highly suggest the MD doctor “nutrition made simple” channel. I feel he is fairly non biased and really thoroughly researches each claim out there

Nobody says you can't lose weight on the carnivore diet. You probably can, but you can also lose weight smoking cigarettes or doing a stint in a concentration camp. None of these things is a good long term answer. If your LDL cholesterol went down on the carnivore diet, that's only because you lost weight...it was the weight loss, and not the carnivore diet that did it.

For all the people explain why saturated fat is bad it goes against logical thinking. If saturated fat was so bad for us the body would do everything in its power to get rid of it. Also, when you fast the body is living off of saturated fat, protein from flesh(your own flesh) glucose it makes from your own fat and protein and water. What don’t we get about that? When too much glucose is in the blood the body tries to get rid of it at all costs even to the point of urinating it out. This fact alone should give people a clue as to what the body finds dangerous in high amounts. It’s not unique to certain individuals it is universal to the human race.

SMH. Use an analogy that makes sense. If you take exogenous testosterone your body down regulates its production. Again the body showing you an example of what is not healthy.

Here you go - “Our liver cells have LDL receptors on them. When LDL cholesterol passes by in the blood, these receptors take the cholesterol out of the blood and into the liver to be broken down. Research suggests that eating too much saturated fat stops the receptors from working so well, and cholesterol builds up in the blood.” Make sense why excess saturated fat is bad?

I don’t believe in excess LDL, I believe my body makes what is appropriate for me. I have a high LDL, there are others who eat similar to me who have low LDL. I have no underlying health conditions and will continue thrive as I have been for over the last 6 years eating a zero carb lifestyle. At 53 years of age I’m in better shape physically than people young enough to be my children.

@@gerard6629 I hear you, and that’s awesome that you’re in shape at 53. However, I think you’re misguided. If it’s the body’s normal process to remove a substance (LDL), and something inhibits that process (saturated fat) then that’s a disruption of the body’s natural process and logically such a disruption = bad. The sinister thing about underlying issues is that you wouldn’t necessarily know if you have them or not. You could have tons of soft plaque built up and a 0 calcium score. You could also be be fine. A lot of people have high LDL and are fine. It’s a game of odds, and the odds favor lower LDL. The major takeaway though is that asserting that you have an appropriate level of LDL because it’s what your body produced isn’t a sound argument. If you need other examples think autoimmunity or cytokine storm

Western civilization fat(The kind of fat where people are 300+ pounds and borderline bedbound) didn't exist until everything was cooked in seed oils. Morbidly obese people who are bedbound are almost 100% on a diet of takeaway food deepfried in PUFA's, it's just not possible to be that fat without PUFAS.

When they say "our ancestors", will sorry, but the world grew up different in every place and corner of the world, also keep into account different human races, we metabolize different, have different DNA, we're all shapes and sizes, all food was not available to everyone, so no one can metabolize EVERYTHING.

Instead of just flashing a clip of Dr. Saladino while bashing his diet you should invite him onto the podcast.. but i know you’d never have someone with legitimate studies that completely dismantles veganism from a health perspective on.. you have an unwavering allegiance to promoting your diet despite the overwhelming evidence that proves animal based to be a superior way of eating

Paul I am sure is paid by the meat and dairy industry. Hes an intelligent bloke! Hes not stupid. He knows exactky whatches doing "cherry picking his data". He knows that he's also trashing the planet, he knows that the barbaric cruelty to animals and the horrendous practice's would have to continue to feed the planet too. So tgere has to be a reason he's a staunch advocate for eating animals and their secretions. Vegannor not, i am sure most reasonably intelligent folks would support a plant-predominant diet if not for health but other reasons if they knew the impact. Put it this way, i attended VegMed2023, in London two week's ago and personally met Dr Gemma Newson. Lovely lady. We both watched the same lecture whereby we were told to carry on feeding folks the meat, dairy, eggs and fish we consume now and more, to meet 10 billion people eventually we need 7.4 extra planets worth of space!!! Space for feed and pasture. Im sorry but Saladino has to be paid by the animal agriculture fraternity because his mantra is irresponsible for health, planet and the animals. I think Simon is a true gentleman on camera being incredibly polite because his reputation for being inpartial has to extend to all areas of his communication if he is to survive and get his message out! Same for Chris from Plant Chompers and Gil from Nutrition Made Simple. Salidin was on Russell Brands platform and you listen to that you'll realise what a charlatan. Money talks!

You make an assumption that increasing LDL cholesterol is a negative thing for health. My research and my own experience is the opposite. I agree that the wonderful saturated fats in red meat, butter, etc increase LDL cholesterol. Yeah! The most current research shows that, as long as that LDL cholesterol is not oxidized by linoleic acid found in polyunsaturated oils, it is a marker of a decrease in all-cause-mortality -improves immune system and so many other health benefits. So much of your conversation is, from my viewpoint, based on older research and has created a huge amount of misinformation.

@@Samuel-bu7xr Evolution is how organisms adapt to changing environments, but it can't make organisms more complex. Complex organisms like humans have no biological advantage over simple organisms like bacteria, so there would have been no reason or way for us to evolve this complex. We were created.

No - the exact opposite is the case. It's plant food - especially seed oils and carbs that cause inflammation

@@galahadthreepwood Where on Earth are you getting your information from? Doctors Michael Greger and Joel Fuhrman have THOUSANDS of studies between them that show - eating plants prevents and reduces inflammation while consuming animal products, increases it.

So interesting! Great discussion. Recently had my blood work done and found I have very low (they’re saying too low) cholesterol- which I suppose makes sense eating a low oil plant based diet for over 15 years. I’m suspicious as to whether or not. I truly need more cholesterol in my diet, but may start incorporating a little coconut oil here in there to see if it raises the bar at all😅
