What you got is a bit more caramelization than normal which by the way is a good way to have them!!! My mom baked me one of these for my birthday and it was one of my favorites ever since! :)

I use crushed pineapple instead and then increase the butter and brown sugar a bit and the cake comes out super moist all the way through

Let this be the first cake u make with baby H...I was taught by my mom and in turn I taught my daughter the same way of making it...meaning, u have to get ur hands in it. Grab the softened butter with your hand and SMEAR IT ALL OVER THE PAN, sides and all. Then grab a handful of the brown sugar and sprinkle. If u get your hands in it, u WILL always remember how to make it.

Max Miller over at the "Tasting History" channel just did a _Pineapple Upside-down Cake_ recipe on tuesday. good timing. Ma dives into the history of each item he features and discusses where it came from, how it developed into what it became, and sometimes even who the major influencers were to/for those historic changes. if you like cooking, i really do recommend his channel. (and yes, he actually DID work for disney, he played "Prince Charming".)

TIPS (from someone who has been baking for almost 70 years): It is usually better to use light brown sugar (if you have it there) instead of dark brown sugar. (In chocolate chip cookies, we use 1/2 light & 1/2 dark brown sugar rather than all dark.) Butter should be at room temperature so it in incorporates well with other ingredients (unless recipe says to use cold/refrigerated butter such as with pastry dough). When using glass baking dish, reduce oven temperature by 25 degrees (so it doesn't burn) & bake about 5 to 10 minutes longer than recipe specifies. Didn't see what you used, but use pure vanilla extract rather than imitation vanilla extract for better flavor. Pineapple upside cake is good with a cup of tea or coffee.

In the US we have light and dark brown sugar. Yours looked dark so that is why it turned out so dark.

Just a little tip. When you use a glass pan instead of metal, reduce the baking time.

This is the only cake I have for my birthday. It's my favorite all time dessert. Made in a cast iron skillet. The crispy corners are what dreams taste like.

Indeed, start a. Child early with different foods and you won't have a picky eater. You see so many kids, and I am talking up to teens and sometimes adults, that only want mac and cheese or chicken nuggets.

Next time you make this, try it in a cast iron pan. The cast iron sort of caramelizes the whole thing and changes the texture in an amazing way.

We stick the butter / brown sugar in the oven for 10 minutes to allow it to carmelize.... after we'd done it in cast iron while camping and yeah..... cast iron is next level!

Don't forget when using cast iron to preheat the skillet in the oven then while it's still on the oven rack layer the ingredients and quickly put it back in the oven. This method is good for caramelization, but can also be tricky without getting a burn scar by accident lol.

Never eaten it with ice cream. Just give me the cake, lol. Well done, you two!! It's the dark brown sugar that you used that's made it darker. You should try it again with light brown sugar and the maraschino cherries if they're available in the UK to see if you like it better. I REALLY need to make one. I haven't had one in a few decades, lol.

YUM! This was one of the desserts my Mom regularly baked when I was growing up. Pineapple Upside Down Cake went out of style for a while, but I'm happy to see it made a comeback on dessert menus. So delicious! The other two desserts my Mom regularly made was Ricotta Cheesecake and Baked Alaska. All good! Looking forward to seeing your reaction to tasting it!

I'm a Brit, living in the UK. I'm also 65 years old and I can remember having this often at home as a pudding. But not only at home; like Manchester Tart, Pineapple (and many other fruits) Upside-down Cake was a staple of school dinners in the sixties and seventies.

This is an old fashioned dessert that is still enjoyed today. Old recipe books include recipes for variations using different fruits (apples, pears, peaches, apricots, plums, etc.) It’s traditionally cooked in a cast iron skillet, though cake pans are commonly used today. I would recommend mixing the melted butter and brown sugar together in the pan before putting the fruit down. I also think you over cooked it a little bit as the bottom should be more of a golden brown rather than a dark brown and it should be more syrupy with the brown sugar/butter syrup dripping down the sides and pooling on the plate. Otherwise it looked pretty good. Enjoy!

Here in the U.S., we never have ice cream or custard with the pineapple upside cake. It’ll just be two different flavors that don’t go together. The cake, light brown sugar and the pineapple is enough after its bake, has a lot of flavor all together. My mother always made hers from scratch and it was always so delicious, especially when it’s still a bit warm. She’s 82 and still cooks and bakes. 😁

If you LOVE pineapple 🍍 you should research how to make "Dole Whip" at home. This is a Disneyland treat one usually has to wait in a very long queue at the park. It's a frozen pineapple treat, like a 'slush' that is bursting with Dole brand pineapple!

The Pineapple started first at the Dole pineapple plantation in the Oahu island in Hawaii. My husband and I were staying in Honolulu and rented a car and drove around the island and we happened to find the Dole pineapple plantation. They have a train ride tour around the fields of pineapples. Check out their website. That’s where we had our first Dole Whip. The difference with Disneyland’s Dole Whip and the Dole Plantation is the one in Oahu, they put pieces of pineapple on the soft serve pineapple flavor ice cream. Even more favorable! 😁🍍

The pineapple upside down cake is a simple cake to do. And you don't have to put topping on it like frosting whipped cream. The butter and brown sugar are your topping.

We usually use a cast iron skillet to cook these cakes. That carmelizes the sugar on the bottom to a greater extent. It's better that way. And canned pineapple will work just as well as fresh. Furthermore, lots of people put pecans between the pineapple rings. But if you use pineapple, canned crushed pineapple works well for the filler. And the closer you come to burning it, the better.

@@muffinamy83 Though in any self-respecting Southern kitchen, we have several sizes to choose from. Mrs. H. only has that humongous cast iron skillet that might be a bit big for cake. She needs more cast iron skillets. And a cast iron Dutch oven wouldn't go amiss.

Try baking it in a crock pot. It takes longer to bake 3 in a half to 4 hours and the batter is make from scratch. My personal favorite crock pot cake is a chocolate cherry upside down cake. when it is done and is warm but not hot turn the cake out. I usually get two cans of the sweet cherries not the pie filling the in it's own juices. the rinse as much juice of the juice as you can then put them on a paper towel. make sure there enough butter on the rock liner to have the cake come out easily. then put more butter and the brown sugar on the bottom laying the cherries in to the sugar. when the cake is cooled enough that you can easily flip it out but before it get the point of sticking. get it on a large enough round platter. then put the remaining cherries around the bottom of the cake for decoration. the cake should be at least 1 1/2 to 2 " in height. Advice do not cut a very large slice of cake because it is a very rick cake and one medium slice is enough. this goes goes for all the crock pot cakes. also the cake it's self will be denser than the regular box variety but still moist. that is my go to cake for birthdays I am making a chocolate cherry upside down next week for a birthday. and with the regular cakes I don't put icing on either they are so rick you can go with out the icing. what I do if I want something on the top is put a paper doily the sprinkle with a little powered sugar done cake decorated.

I'm76... my Grandmother served this cake at a Sunday lunch when I was about 10 years old. I think it was a recipe on the Dole can. It was, and is still, quite delicious.

I have been making Pineapple Upside Down cake for my husband's birthday for 56 years. It is wonderful, but I always put copped pecans in between the pineapple slices in the brown sugar before pouring in the cake batter. The best part is the gooey crunchy edges with all the butter, sugar and butter! It is truly a wonderful cake and really rather easy. However, I turn mine out on the plate immediately when I take it out of the oven. It always comes out without any problem. Good job!

Neither my daughter or I like frosting or icing on cakes. We prefer powdered sugar for a topping; and I also like fruit and/or nut toppings, too. Pineapple Upside-down Cake is a favorite of mine. Neither of us are partial to chocolate cake, although I don't mind the cake batter being chocolate, just so long as there is no frosting.

My mother made a pineapple upside down cake every time I had a birthday for years because it was my favorite. Then I grew up and no longer lived near her. Your cake was really beautiful and reminded me of my mother's cake for me. You can also make peach, pear, apple, blueberry, or almost any fruit upside down cake. All are delicious.

I just wanted to say I appreciate the reminders to hit like as I almost always want to, w/ any thing I watch on KZbin, but I get wrapped up in watching, then, at the obvious 'end'/closing, the subscribe part pops up, and I believe that's where peole believe KZbin has unsubscribed them, b/c in trying to like a video (esp on TV/streaming), it's easy to accidentally do when all the 'next video & little windows you 'Tubers put up, pop up. Also good ep. Might have gone 3-5 mins too long... but you want some browning on the former bottom, now top, just a bit lighter brown.

we use a big skillet to bake pineapple upside down, which is a favorite treat here. I always made it for my dad's birthday. I also used a skillet for cornbread.

I love Pineapple Upside Down cake and make it regularly. Most people are using a cast iron skillet to make it now, but I've always made it in a 9" x 13" glass baking dish. I do have some variances I do that do not conform to the way most people make it. For one, I mix the butter and brown sugar together after the butter is fully melted, and pour the mixture into the glass dish. I then spread it out evenly. Then I drain a can of CRUSHED pineapple (and save the juice) and spread it out over the brown sugar mixture. I used crushed pineapple because that insures I get pineapple in every bite!!! Then I just use a regular pineapple flavored boxed cake mix... but I do add one extra egg to whatever it calls for, and a box of vanilla instant pudding. I also used the drained pineapple juice instead of water. I know they say to not do this, but I'm not sure why as it always adds extra pineapple flavor for me, and makes for a very moist cake.

My grandma wasn't the best cook but she sure could bake. She loved sweets. This was her specialty. The rest of my family really liked chocolate so they always wanted a chocolate mayonnaise cake. But, as I was her favorite, lol, she would always make this for me for family gatherings. And I would get to take any leftovers of this home! Such childhood memories. I love this cake. She would make it in a rectangular pan.

Mrs H, our family always wanted pineapple in each bite too. That's why I do it with crushed pineapple. Then we get pineapple in every single bite. The pineapple definitely MAKES the cake!

I'm sure you've figured out by now, it was so dark because thats how brown sugar cooks up. And a properly made pineapple upside down cake is one of my favorites, and you made that one perfectly.

I'd watched my grandmother make them, but never had myself, when I tried to order one from a nearby bakery. They said they'd never heard of it, so I gave them directions from my childhood memories, and it turned out perfect! After that, I just baked them myself. *Always* 6 pineapple ring slices, each with a maraschino cherry in the hole, and plenty of brown sugar and real butter!

It's not burned, it's delicious caramelized brown sugar. Good job! Best with a hot, fresh cup of coffee.

You did a great job! I usually use a 9 x 13 glass baking dish and melt the butter on the stove top with the brown sugar, and pour it in the baking dish. A can of sliced pineapple. Put them down just as you did. I use jarred Maraschino cherries.But I also fill the spaces with walnuts. Just use a store bought box of yellow cake mix, prepared as directed on the box. Pour over the top of and bake as directed on the box. This is my go to, that I bring to family gatherings in summer. God bless

My mother made this in a cast iron 12 inch frying pan. Put the butter and brown sugar into the pan and melt on the stove top, stirring until butter and sugar were both melted. Add pineapple rings and cherries. She made her own cake, but I cheat and use a yellow cake mix or pineapple cake mix adding the drained pineapple juice with enough water to make the amount of liquid the mix calls for. Proceed as with your recipe. The brown sugar and butter form a sticky caramel. Love this cake! Going to teach this to my great grandson in a few weeks for his mom’s birthday.

Now that you've tried it from scratch, next time (if you like them) just use a packaged yellow cake mix. Much easier. Also, when baking in glass or a dark colored pan, we reduce the oven heat by 25 degrees. Looks like it got a bit browned but glad it worked out for you.

Yes, actually I use a pineapple cake mix and replace water with the pineapple juice from the can. Light brown sugar instead of dark and I use pineapple tidbits to give more pineapple.

This is one of our family's favorites. We made it in a cast iron skillet, frying the butter, brown sugar and fruit before adding the cake mix and baking.

I have not had an upside down pineapple cake in a very long time. I always liked it. Baby H sure liked it. I have not seen her turn down any kind of food yet. She's a really good eater.

I LOVE pineapple upside down cake! Good evening from North Carolina My stepmother uses drained crushed pineapple instead of sliced. You get pineapple in every bite.

Mrs. H, let me first say that you are very brave in trying all these recipes for the first time. You are doing a fantastic job and the end product turns out very well. This video has me craving for a pineapple upside down cake now. (I haven’t had one in decades.) I may have to take your lead and bake one…..and I don’t like to bake. 😅. Dole company is the largest grower and seller of pineapples in Hawaii and southern California. (mostly Hawaii). they also started several events and competition for pineapples and other fruits in order to promote the different fruits they grow and sell. (like bananas from South and Central America).

normally the cakes are about twice as thick, but you did a great small one too. the hardest part is the flip and release and you did great. the brown sugar makes it darken, so no worries.

It is a world wide recipe, Our British version used Tate & Lyle Golden Syrup. They have a modified modern version on their website. Here is our older British booklet recipe version from my British Grandma. 8 oz. flour, ½ tsp salt, 2 tsp ginger, 1 tsp baking soda, 4 oz. butter, 4 oz. brown sugar, 4 oz. Lyles Golden Syrup, 2 Eggs; Sift dry ingredients in bowl, melt butter, sugar, syrup in pan, added all together with beaten eggs, add milk if needed. In 7" pan, pour melted 1 oz. butter, 2 oz. brown sugar, arrange pineapple and cherries. Cover with cake batter. Bake at 350°F, 45-50 mins. I don't know if oz measure is weight or dry measure. We always used North American dry measure instead of scale. The cake sponge is golden darker crumble with a spiced sweat fruity taste.

This was my birthday cake for years. There is a sauce to go with it. For Americans it's below the recipe in the Betty Crocker cookbook 1957. In a saucepan mix 1/2 cup lite brown sugar and 1 tablespoon cornstarch. Stir in 1 cup of pineapple juice. Bring to a boil over medium heat, stirring constantly 'til thickened. Remove from heat, add 2 tablespoons butter and 1/2 tsp lemon juice. Serve warm over cake.
