Think of country fried chicken or steak the same as German schnitzel. A schnitzel is a thin slice of meat. The meat is usually thinned by pounding with a meat tenderizer, then breaded before frying. Breaded schnitzel is made using veal, pork, chicken, mutton, beef, or turkey.

Biscuits and gravy is incredible and if you have milk, flour butter, baking powder, salt and pepper you can make it VERY easily. It's better with whole buttermilk, but still outstanding either way. For the Sausage (aka Cream aka Country) gravy all you need is 2TBSP flour, 2 TBSP Butter, and two cups whole milk. (Or 1.5 cups milk and .5 cups cream if you want to spoil yourselves). Melt the butter then add the flour and stir until thoroughly combined. Add the milk and stir frequently until it thickens, then serve over hot biscuits. If you are going to add sausage, do so before your final seasoning because there is a ton of spice in sausage. Country fried steak and Chicken fried steak both use steak and chicken breading. They can be deep fried but pan frying is much more common and superior (more caramelization of the coating). The only difference is that country fried steak has normal (brown) gravy and chicken fried steak uses cream gravy. Don't drink tea with biscuits and gravy. The dish is very strongly flavored and rich and the subtle flavor of tea will be lost in it. The difference between American biscuits and scones: aside from the fact that one is made for sweeter applications they are also different in ingredients. American biscuits often use buttermilk, while scones are made with milk and eggs.

The biscuits are buttery, the gravy is sausage gravy which has American style breakfast sausage crumbled in it as well as being made with the sausage grease. There’s no cheese. Though you could make a cheese sauce instead like for macaroni. The other dishes were ‘fancy’ interpretations of breakfast sandwiches. Chicken fried/country fried steak isn’t really deep fried. It’s a cheap cut of steak, pounded thin to tenderize it, then breaded and pan fried _like chicken_ and served with white gravy which is just seasoned with salt and pepper rather than having sausage. Breakfast sandwiches are pretty common just usually simpler and without gravy. Even most fast food places will have chicken biscuits or sausage biscuits, maybe even steak biscuits on their breakfast menu. Ham biscuits are a common country breakfast sandwich.

Good guess from Millie. Chicken Fried Steak is Top Sirloin (or occasionally Top Round). But not normal Top Sirloin/Round. It's pounded with a textured wooden mallet in a process called Cubing, (so the end result is called Cube Steak). The meat is far more tender than usual for those cuts.

Well, you really need the cheapest and leanest beef you can find. Middle round steak is the best, but any lean grass fed beef or a "retired" dairy cow will also work. You want the leanest and "worst" beef possible. You then need to pound the crap out of it with a METAL meat hammer, pounding it as thin as you can. You then put the pounded beef bits into a mix of flour, salt, black pepper, and cayenne powder, dip them into a milk and egg batter, and then back into the flour mix. Fry the beef as hot as you can in cast iron cookware you inherited. Make Cream Gravy in the skillet after you are done.

Some call it sawmill gravy.

Biscuits and red-eye gravy… a ridiculous splurge that’s worth every single calorie! The “cubed steak” is a thin cut round steak that’s pounded with a meat tenderizer, breaded and deep fried- then served with rice and buttermilk gravy. Yuuummmyyy

For chicken fried steak, imagine a very thin slice of steak that you pound (tenderize) until it's nearly falling apart. Then you season it and dredge it and in flour and so on. Recipes very, but that's the idea. Fry it like chicken. It's not like a sirloin or ribeye. We sometimes call it minute steak.

Chicken/Country fried steak is (usually) cube steak that has been pounded into oblivion prior to cooking. It's quite thin. And delicious.

The gravy in biscuits and gravy is like a béchamel white sauce with crumbled cooked sausage (pork, usually) stirred in and allowed to simmer. Not sure why the one on the video is so yellow/orange - maybe it’s been spiced up with cayenne or something? The sausage, of course, is the mince only, without casing like a hot dog.

It's most likely the lighting of the place. Not that I have anything against it but lighting does have an impact.

it was swimming in butter. the name of the place alone screams, no southern sausage gravy here.

Biscuits and gravy is easily a 10/10 and not an acquired taste at all. It's considered proper soul food which is delicious to everyone.

Yeah, not sure how they think it's an "acquired taste". Hardly.

So here's my issue with foreigners trying biscuits and gravy. The problem is that if you are going to try it, you either need to have it at a LOCAL American restaurant (not a chain) that's known for their good biscuits and gravy, or made by an actual American who knows what the hell they're doing. So many brits come to America and get biscuits and gravy at McDonald's or Bojangles or something and it's bad and then they're like "Americans are nuts, biscuits and gravy is terrible". And it's like yeah. You're probably eating gravy that came out of a plastic bag and kept barely warm in a steamer tray for four hours.

White gravy is sautéed breakfast pork sausage, "pork, sage, red pepper flakes and salt". Flour cooked to tan in the sausage fat, then thinned with milk. American biscuits are rich and flaky and fluffy and buttery, they are just as good with a gravy or soup as they are with sweet spreads. I like preserved figs or honey and bacon or sausage on mine.

Chicken Fried Steak uses cube steak, which is pounded thin, battered in fried chicken batter, and then fried in oil. They're usually just fried in a small amount of oil on the stove, but people like to deep fry them as well. The steak is very tender from being pounded thin. Yumm!

Biscuits and gravy is one of those dishes that can be the best thing ever, or not, depending on who cooked it. It's always been a good way to make a little bit of sausage meat feed an entire family. I like making mine in a cast iron skillet, with a good dash of freshly ground black pepper.

Yes, the whole point of southern food is to extend meat flavor into non-meat things. The good meat must be sold to feed the elites so you have cash to survive. You make the best of what you have left by grinding scraps into heavily spiced sausage. And you really should eat this with tabasco vinegar or a fermented cayenne sauce.

I made chicken fried steak and country gravy just last week here in the PNW, USA. The steak is called cube steak in the grocery store and is a cheaper cut of meat that is tenderized with a tool that cuts vertical cuts in it and pounded to 1/4 on an inch. The thick gravy is made from the drippings left in the pan after frying the meat and adding milk and flour. Wonderful if prepared correctly.

Biscuits and gravy is my favorite breakfast of all time, flaky golden biscuits with some butter on them split them open and poor sausage gravy all over the top and gorge yourself until you cant move!
