❤❤ 🥔 my seven year old is obsessed with your channel as am I. She wanted to watch yesterday and you literally posted as we started watching. Potatoes, carrots, cauliflower, sprouts and courgette for tea.

I pre-steam my potatoes in the Instant Pot, chill then blast in the air fryer when I want one.

I absolutely love to cook up some zucchini until soft, then I season it and mash it up a bit with a fork and use it as a spread on sweet potato toast! Also I don't really like regular potatoes but here you can buy really small ones with the thinnest skin, they're a bit pricy but so much better!! The potato sushi is such a Ami thing to do, I love it! 😄😍

Hi Amy, after listening to you going on about poatoes, I'm doing potatoe reset this next week since had my sons 9th bday and ate alot of choc cake and addicted to eat for past 4 days. I am sweet potatoes for breakfast and potatoes for the rest of the day and I add simple salad (lettuce, tomatoes, peppers, cucumbers and onion), broccoli, asparagus, cabbage or cauliflower. I will probably switch from sweet potatoes to hash brown in few days and add some mush potatoes with mushroom gravy

Potato sushi, truly enjoyed your video and your frank and honest talk/chat. I use the instant pot to cook the sweet potato..I do 1 minute on low pressure, my potatoes are chopped so it is already soft in 1 minute :) You can always take the cooked sweet potato thereafter and bake or air fry for added crispness.

Day 2 potato reset finished! I did notice today that I am missing my fruit but I'm going to keep going. I usually have a fruit and veggie packed smoothie for lunch so I made a sweet potato carrot celery kale smoothie with some vanilla extract cinnamon and nutmeg. It was yummy! I really need to attempt the potato sushi! Looks pretty interesting!

Hi Ami, love your videos! I would love a meal planner or guide of only your extra veg. For example, the air fried courgettes and all the other ways you make your extra veg. Literally a list of 20 extra veg and then some examples of what to have them with. I know the meal plan has the meal and then the veg, but my brain needs the veg and then short suggestions of the meal. Weird, but it might be helpful for other people as well. I struggle with getting the extra veg. I cook Whole Food Plant Based for my family, but to maintain my weight-loss I need the extra veg with my meals. I’m tired of microwaved broccoli and green beans. The extra veg is really the secret to weightloss and keeping it off and feeling full in my opinion😊

I’m going to try the crispy courgettes. I do find meal prep can be a struggle at times. There is so much you can do with sweet potato xxxx

In case anyone hadn’t yet tried the crispy courgettes let me just say I am totally addicted to them, they are ridiculously good. You wouldn’t maybe think so, it’s just zucchini with salt and nutritional yeast, but it is amazing. Try it!

Pretty sure that my potato prep is going to have to include making mashed potatoes in large quantities. I just can't seem to think of anything to do with potato and actually ended up just starving while standing at the fridge cause I put off making anything while I tried to make decisions. Mashed potatoes are always an easy decision so that should help...

i still love the potatoes! I have a zumba class in a hour and after that, i'm going to eat mashed potatoes with green beans and mushroom gravy! Maybe with some crispy courgette on the side😍😍

Ive rewatched your video as I want to make the crispy courgettes. I love ❤️ veg. I love ❤️ how you’re so organised. I love seeing your little ones too. They’re so cute. It’s funny as I call my daughter boo boo and she’s 8. She’s still really cute 🥰. I wish they could stay little forever lol 😂 xxx

When I was visiting Charleston SC, US, this little restaurant called the Brown Dog, made a delicious potato salad using a combo of sweet and regular potatoes. Of course it had vegan mayo, but now at home, I always mix both potatoes for potato salad. Onion, celery, pickles and some tofu mayo, which I know you can’t have now, but maybe you can figure out a substitute for that, if you do let me know.

I made the sushi! I should have put in some Japanese pickle, but I forgot. I did load up on the pickled ginger though! Weird, but good anyway!

How do you make the rice in the instant pot?

Brown rice 22 minutes plus 10 minutes after (or however long, longer is fine) 2 cups rinsed rice to 2.5 cups water. White rice equal rinsed rice and water, 18 minutes plus 10 or more natural release. BUT for some reason, there are all different cook times on the internet. 🤔
