My parents recently forced me to become a Vegan. I thought it was a crazy idea at first .. Well look at me now! Lost a total of 17 pounds, and feeling great. I may only be 14, but I can promise being overweight is not fun. (Do you know, Dillon, my mother and father are always referring to your channel? Saying, "Dillon's recipe" or "Dillon this", "Dillon that.") So I want to officially say Thank you for helping my parents feel more motivated to eat better! :D

Our church is vegan and we have a vegan potluck after church. Our pastor makes us a wonderful cheese sauce and a pot of beans. I bring some brown rice and fresh veggies, like green onions and chopped cilantro. Others bring the lettuce and chips. We layer chips or rice, beans with a salad on top with cheese sauce and olives and tomatoes. So yummy 😋

Dillon’s cheese sauce Can be modified to the way you like it Rough chop 1 onion 1 head of garlic minced Put both in a pan & sauté w/water or veggie broth (In another version chopped up peppers was added to the pan for extra zing!) In a separate bowl- 1 TBL miso 1/3 cup nutritional yeast 1/2 tsp turmeric 1/2 tsp black pepper 1 tsp sweet Or smoked paprika 1/2 tsp cumin (optional) 1 tsp crushed red pepper (optional) 1/2 cup veggie broth (to start) Whisk together & add to onion/garlic already cooking Cook for a few minutes then add to blender. Keep veggie stock handy in case you need more. ***note-if you don’t have a cooking blender make sure and let the onion/garlic mixture cool down before you try and blend it. Add 1 or 2 potatoes to the blender & blend till smooth. Add veggie broth or water until you get the consistency you want.

I changed the ingredients, reluctantly, because I can't eat nightshades. Instead of potatoes I added a can of organic garbanzo beans and let it boil together for 10 minutes. Blended it up and it was so good!

I wish more men enjoyed veggies as much as you! What's so neat about your videos is that right after you demo something (like the cheese sauces), you show us right then and there how you're gonna eat it. And on top of it, you actually love the dish and tell us how great it tastes. It makes us want to come through that screen and have a taste. I'm really excited about trying your recipes. I've watched a LOT of KZbins and I read a lot of books - but so far, you are the only one that keeps your techniques simple and you have a meal on that counter in short order. If SOS works for you, all my respect; I don't use cashews because they're mostly Omega 6, but will use raw soaked almonds or walnuts; not greasy to me, but won't press the point. Proportion is all; you really don't need that much; similarly 1/2 avocado is all you're going to need and 5 walnut halves according to Michael Greger is enough to render fat soluble vits bioavailable, so less is often more. I love The Happy Pear and the community they have created in Ireland, but not a fan of coconut everything, which is fine too. 'Take what you can, all you can carry, etc." tx my old friend Tom Petty gone 2 years today. The 2nd version with steamed cauliflouer (sp) worked better for me because of high GI index with peeled white potatoes, just personal journey; it's all good!!!!

Hi Dillan! I am an old experienced cook but have wheat and dairy issues. So, I thank all of you Vegan friends for sharing your wonderful wisdom and glorious recipes with me! I have a tip that will save you all from chopping; unless of course when we wish to dice raw onions and garlic. Try roasting the onions and garlic then throwing them into the processor. It’s quicker, less mess and tastes marvelous. It’s not a substitute for raw, just a nice change. Thanx so much for sharing!

That looks delicious. I make a vegan cheese sauce in a similar way. Instead of using potatoes to make it thick, I use cashews that I soak first for at least 30 minutes. I also add a little bit of almond milk. Mine turns out to be more like an alfredo sauce.

I am so glad I found this channel Dylan. I am WFPB but I still eat too much salt. Way too much salt. I didn’t really think it was that bad. It wasn’t until I saw your video on salt that I began to understand how salt causes you (me) to eat more. It’s very true for me. I just made your cheese sauce again, but this time I made it as you suggested into “Macaroni & Cheese.” I had cooked broccoli on hand, so I cut it into small pieces and added some thawed frozen peas. For the pasta I used Trader Joe’s Red Lentil Sedanini. I also added mushrooms and Greek olives. It’s amazing! My husband hasn’t stopped raving about it...he’s on his second helping. Thanks for all your great ideas.

Well Your World I pretty much made your first version, but added some red pepper and mushrooms. Yesterday I made some more using the same ingredients, plus adding some cherry tomatoes. We used it over various veggies...potatoes, broccoli, etc. Love it!

I watched this video 2x and then made one with mostly carrot and some potato. Added some garlic and onion powder and nooch. This is a total binge stopper. AMAZING.

1 potato with cheese sauce some steamed cauliflower steamed cauliflwer and brocoli with cheese sauce celery with cheese sauce and siracha (I was laughing at this point) 1 carrot in cheese sauce 1 can of black beans topped with cheese sauce and pico....
