We do something very similar with the addition of miso and rice wine vinegar, plus mushrooms, cruciferous veggies and leeks. So, if anyone wants to add veggies to this recipe, you'd be in safe hands with those pairings I think.

Very true comparison when you think about the amount of fat in a good quality bechamel cheese sauce; if you don't have health constraints, fat is flavor. Also, brown butter and generous comfort food portions for the win. Lastly #season with your heart.

You're very charming. I've yet to see Ratatouille and yet you've mentioned the second reference I've heard to it today. There's a place I occasionally get tahini chocolate chip cookies from and what that tahini does to enhance their flavor is incredible, so I imagine this pasta is as mind-blowing. Look forward to making this someday.

Looks awesome. My one problem is that I'm allergic to nightshades and can't do peppers (other than black/white/pink peppercorns - pepper). The list is tomatoes, potatoes, eggplant and peppers (paprika, bell peppers, hot peppers). I love pasta and tahini so I'm going to try without the pepper. If you have any ideas for substitutions that can balance the flavor I'm definitely open to hearing about them. Thanks!

Looks amazing! But we have loved ones with celiac and have to use GF pasta? Does the pasta water still have the necessary starch? If not, is there a way to substitute that starch?

Banza will still get you some great pasta water! I wouldn't recommend any other brand, though, they can be hit-or-miss!
