Remember you are cooking them at a very low temperature, plus they have direct contact with liquid. By covering in aluminum foil, it traps the vapor from escaping which keeps the vegetables moist while cooking at the same time.

I've seen the movie ratatouille. It's brilliant. I see you have as well, and you've captured what the ratatouille dish looks like. But when it is served to the food critic, it's actually a lump on a plate rather than what you have made. Either way, you're a brilliant cook. It's merely impossible to cook a Disney dish. by my experience 90 minutes is enough. He put too much sauce in the pan. With 1 finger of sauce 90 mins is perfect

No, in restaurant service you don't cook dishes like this from scratch when someone orders it. Since this is a vegetable stew, as he said in the video, you can reheat it the next day when a customer orders it. Stews taste better the next day because the flavors have had time to mellow and combine together overnight. Otherwise if a restaurant doesn't want to serve it the next day, they will prepare this dish before service starts, keep it warm, then put a serving in the oven to make sure it's hot when a customer orders it.

These youtube ratatouilles are super pretentious. The fanciest thing you have to do is sweat the cubed eggplant for 30 minutes in a bowl, having tossed it with a lot of salt. Pour away the liquid in the bottom of the bowl before you throw it in a hot fryin' pan with hot olive oil. The second fanciest thing you have to do is select herbs de province at the hippy supermarket. The other cubed veggies you throw in there with the eggplant are strictly MUSHROOMS, TOMATOS AND BELL PEPPERS (carrots and celery are northern france cookin.') Now you let them four kinds of veggies fry for 25 minutes and seven minutes before you serve you add the herbs, fresh or dried. Eat with bread. Add white fish to the dish if you want. That's real ratatouille, real easy.

Beyenca M you could probably just use spaghetti sauce as a substitute if you have no desire to make the sauce from scratch. Ingredients wise it’s exceptionally similar. My family does a lot of canning 😅

I made this with my mom for my birthday. It took me about 90 minutes to prepare it and 3 1/2 hours in the oven. We had an Italian feast for my birthday with, homemade pizza, pasta, ratatouille, and garlic bread. It was worth it

I made this last week. I left out the hotter chilies (I'm Irish Canadian -- I love flavour, but chilies are something I'm still working in to!) and this dish was still packed with flavour. Then your temp was too high or your sauce was incorrect. Slow cook first remember. This isn't a recipe you throw in the oven and forget about. And when you say 'pls adjust', you should suggest what you adjusted it to. Or do you want someone to adjust it for you?

pepê I think you cooked it and thought he was using celcius instead of farenheit. 280F is 137 Celcius and 350F is 176 Celcius. Farenheit is the American system, I don't know why he uses it, because he is french (european) and we use celcius.

This is not the "peasant" version, my grandma uses just half of the ingredients and puts everything directly in the oven. Pretty quick and delicious. The most important thing is the freshness of the vegetables.

Hi Coco Moro, I think certain dishes were popular with "peasants" back in the days not because they were easy to prepare, but because they were made with inexpensive ingredients that either most peasants had in abundance (for the most part) or could purchase easily - namely veggies and herbs. These dishes normally just not include (large amounts of) meat/fish/poultry since those were more expensive and harder for peasants to come by. I suppose, most vegetarian dishes were considered "peasant dishes" back in the day (and maybe even now). : )

Just made this ratatouille! It looks amazing, I hope I did it justice. I'll have to update tomorrow night when we eat it. It took me forever seeing how i'm no chef and very slow in the kitchen, but it's probably the prettiest thing I've ever made.

Bonjour Bruno, ta recette est tres tres tres allechante et la presentation est superbe. Pour ma part, je trouve ca beaucoup plus attirant que la version originale que nos parents ou grand-parents nous servaient lorsque nous etions enfants. ;-) Je vais tenter de la reproduire ce weekend bien que je ne pense pas pouvoir trouver tous les ingredients. +Bruno Albouze Bonjour Bruno, finalement je n'ai pas pu faire la ratatouille il y a 3 semaines mais aujourd'hui ! Je n'ai malheureusement pas pu trouver tous les ingredients car dans mon pays certains sont difficiles a trouver voir impossible et j'ai aussi fait quelques petites retouches au niveau des herbes/epices pour les memes raisons mais aussi parce-que j'aime bien tester. :--) Je viens juste de la mettre au four pour 3 heures par contre je ne suis pas sur d'avoir bien compris la cuisson avant service. Tu la remets 45 minutes au four avec ou sans papier aluminium ? Il me semble tu dis "covered" (a 3:11) mais sur la video (a 3:18) tu la sors du four sans papier aluminium du coup je suis un peu confus. Avec ou sans ? Je suis vraiment impatient de me mettre a table... mais dans l'immediat je dois faire preuve de patience pendant plusieurs heures. >_< Merci d'avance.

La cuisson au four mon doux Jesus est bien plus douce et organic. Respectez un peu votre entourage et Dieu vous le rendra. Happy ratatouille day.. and cooked in the oven mon cher :)

Alors tu vois, je vais te faire une confidence mon petit lapin. Je n'ai jamais fait blanchir mes dents..donc merci du compliment.. les Français en revanche sont connu pour avoir les dents pourri alors qu'ils ont les soins 10 fois moins cher qu'ici aux US...allez comprendre. Pour les muscles je n'en ai plus beaucoup.. les produits chimiques? LOL.. les dernieres études nous montre que la France est championne du monde des pesticides.. encore une fois, tu n'a pas bien révisé.. pas de chance - Donc, si tu veux avoir du succès il faudra apprendre un métier et travailler dur, fermer ta gueule, faire un peut de muscu, avoir des dents propre et bien entretenu et surtout..être intelligent pour faire les bons choix et ne pas envier les autres qui se levent tôt et n'on pas la télévision.

How do you keep you produce from sticking to your knife as you slice and dice?

Depends on which knife you use. You ought to get a knife which is designed in such a way as to prevent the vegetables from sticking to it. :)

damillionmalania Huh? I use a 8" chefs knife... no special "prevent the veg from sticking" knives exist that I know hence my question. Though from watching again -it does seem like his stick as well so perhaps its just the way it is...

pesto12601 There's really no knife that doesn't stick at all, but there are knives that stick conciderably less to the things you're cutting. They usually have some kind of holes or openings in the blade, and some come with a non-stick coating. The coating will pretty much start to come off the minute you sharpen it, though, so these knives are usually not something you cling on to for years and years.
