As an Italian, if I may say, DO use extra vergin olive oil. It makes everything tastier! You shouldn't fry anything with it, but as long as the bread is just toasted, it's fine. 👍

Exactly. Olive oil in general shouldn't be too hot, the smoking point being quite low as far as oils go (general rule: smoky oil = cancer). The issue with extra virgin is you lose quality when heated too much (even without reaching smoking point), so there's no real point using it in very hot preparations that required long sustained heat. But as you said, if just for toasting, it's perfectly fine.

Low heat extra virgin heated low to med low is fine... Even medium .. just watch the smoke point... The less refined the oil the better for your body.. Use fat but know the boundaries, grass fed an less refined and lower heat but to sear meat use a tallow and reg olive mix or ghee (grass fed butter then Clearfield) will have a much higher smoke point... She's really got a talent .. very impressed..

You want a tomato you don’t have to scoop out? Find someone who grows ox heart heirloom tomatoes. They grow to easily be a kilo EACH and have almost no goop inside. I grow them for canning and they’re the best tomatoes, hands down. (If you’re ever near Cincinnati, hit me up, if they’re in season I’ll give you some. )

That’s a myth. They have done recent studies that when heated the Polyphenols actually protect the oil when heated high and aren’t bad for you. So keep doing what you are doing.

We usually use cherry tomatoes (or datterino) and marinate them in their own juice with just salt, oil, basil and garlic (you could take it out after it's marinated). You can add oregano too. Also, you don't need to use oil on the bread before toasting it, you can add it after. But if you want to toast it with oil on it it's fine and you CAN heat extra virgin olive oil: at least we've been doing this our whole life lol. Where I live we usually fry eggplants in extra vergine olive oil 'cause it's tasty and it has a pretty high smoke point (so, it's not becoming carcinogenic as other people have been saying in the comments). Hi! It's actually the opposite, olive oil has a smoking point much higher than other oils, so it's the best oil to heat! Although if you fry food in olive oil it could have a "heavier" taste.

Italian here: we usually just put oil salt and rub garlic on bread. The tomato doesn't need anything, only basil and salt that's it. No pepper or other garlic needed

You know close to nothing about food science if you seriously say that “regular” olive oil is better for heating than EVOO, when the latter literally has a higher smoke point and less free acidity (+better odor and taste) Unless you’re talking about using refined olive oil, which completely defeats the purpose by being odorless and tasteless..
