This is a recipe for a Hazelnut Meringue Cookie. In Italy, this cookie is known as Brutti ma Buoni. Roughly translated Brutti ma Buoni means 'ugly but good'. Personally, I don't agree with the ugly part, but I do agree that they taste really good. The outside crust of this cookie is thin and delicate, yet wonderfully crisp. Inside the texture is soft and chewy and full of toasted hazelnuts. Fantastic with a hot cup of tea or coffee.

Definitely want to give this recipe a try! Love hazelnuts. So happy you didn't edit out your dog barking. Love that h/she is seen/heard in your videos. My dogs are always in the kitchen and I wouldn't want to cook/bake... be... without them! Thank you for all of your videos. I appreciate your time and expertise.

Termines bakery sells this cookie and I love them. I think that Termines uses orange extract instead of vanilla and they are soooo delicious. I could never find this recipe. OMG, I am sooo excited. Thank you for sharing. You made my day!!! Woo hoo!!!

We had them in Venice where the lovely Grandma who did the cooking used toasted pine nuts and lightly dusted the tops with a combo of powdered sugar with a smidge of cocoa powder. They were divine! We're headed back to Venice this fall so we're looking forward to finding the bakery again and having some more but I'm going to try and recreate them using your recipe. Mille grazie!

These look wonderful. My husband bought an entire case of praline pecans and some walnuts and I keep looking for recipes to use them in, I am going to try this to help use them up lol. And your doggo is adorable, terriers are the absolute best.

Hazel nutz are my favorite as well...my problem is once I start eating them, I have a hard time stopping...lol .. I see Carrie was there to make sure you were doing it right...lol ♡

I hate meringues but I can see how great these would be with some raspberry liqueur (like Chambord), a drop of red food coloring, and toasted-cracked almonds! A truly versatile recipe - thank you for the demonstration!

Oh how wonderful 😍 I was born in Australia but grew up in an Italian household as both my parents are Italian. I’ve never made these but I’ve tried store bought and they’re delicious. Love this recipe, thank you Stephanie

Same here. When we were kids our grandmother would take us to a place that served just different kinds of breads and cookies. Probably would've never known there were so many different kinds if not for her, it was great!

Your dog is so cute! The cookies look delicious. I have never made this particular kind, but have made coconut macaroons once which were very good. Thank you for taking the time to show how to make this wonderful recipe.

I make your meringue cookies all the time. I wonder about dipping them in some chocolate then rolling them in finer chopped hazelnuts. Or better yet using these as a decoration on top of a chocolate cake. I love your dog. So sweet looking. Full of personality.

Thank you for this recipe for Brutti Ma "BOO-WOE-KNEE". I have a recipe that does not direct to cook the egg whites, and it also turned out well. I also prefer the chocolate version, as my favorite NYC Italian bakery made them since I was a little girl.

Wonderful! I love meringue, but I've always been scared to make them... plus, my husband doesn't like them ( can't understand that lol) so if I make the brutti ma buoni they will all be for me... Not difficult to make but, as you said, humidity is a factor, like that you coarsely chopped the hazelnuts...so good.

I'll make those tomorrow Joy, thank you. I had failed meringue the other day and I might do the Swiss meringue method to resuscitate the mixture. I'll tell you if it works. Either way, I will be eating those tomorrow!

Hi from Greece !! Great recipe .. I can already smell the hazelnuts... I think we could add as alcohol the liqueur "amaretto". Two questions: where can we store the cookies , in a plastic or in a metal box? And, do you have a recipe for cake with hazelnuts, almonds or walnuts??🧁🧁🧁❤

Mmmmm. Getting ready to bake something. After I finish cup of coffee. No sleep - probably because I was so hungry. Never works out to try sleeping when brain can't disengage the thoughts of "I am hungry! What can we bake?!" Can't think of what to make with the yolks if I make meringue cookies with pecans. Tried unsuccessfully to cook/feed to my dog but she doesn't like. Do you give your dog the yolks?

Can you please share with us the brand of mixer you use? Have been searching for one. Called a major company in usa who stated their new models should not be run for more than 3 consecutive minutes. There are recipes that call for at least 5 minutes continuous use.

I think yours aren’t ugly looking because you didn’t ground the hazelnuts as in the original recipe. Can I say yours are more on the pavlova side?

Sorry to say that my brutti cookies didnt give a crispy texture. The whole cookies came out so choowee😯

3 whites, 150 gr powdered sugar, roasted hazelnuts ground, 1 t. B.powder. scoop, bake 325 10 min. 275 30 min. Cool. Dip bottoms in milk chocolate..🤠 or scoop, roll in sugar and toll in p. Sugar and they'll crack

Maybe the meringue wasn’t beaten long enough so it was too thin, causing it to spread when baked.
