I love that you're including more affordable recipes, but that serving of pineapples in your first dish alone is over $2. One single fresh chilli pepper at my local grocer is $1.50, don't even get me started on fresh ginger. If I were to meal prep any of these recipes it would easily be $150-200 and only make around 5~6 servings. Perhaps your food costs/burdens are better in the Netherlands, but I'd like to understand how to stretch my grocery budget to incorporate more of these healthy and vegan meals.

I miss the produce prices I used to pay in Europe. It made it so much easier to eat healthy. Yesterday I just went to an American grocery store where I was able to pick up red/yellow bell peppers for the sale price of 10 for $10. On sale from its normal $1.69 each. Something about our system really needs to change.

If you have an asian supermarket nearby, like the Amazing Oriental, their tofu is usually cheaper than the AH or the Jumbo. Also spices are also usually in bigger packs and cheaper

The water in which the mung beans were boiling is very nutritious. If you simply add some ghee, cumin seeds and a pinch of salt to it, it makes one of the healthiest soups to have before a meal, in winter or even when you are feeling a little sick. - a comment from a fan sitting all the way back in india ❤️

I made the tart and it was so so yum, but i would highly recommend not adding any alt to the vegetables in the beginning, because my sundried tomatoes were so heavily salted that there was just way to much salt in the filling. But definitely give this tart a try💗
