I make those puff pastry vegetable pies and fill them with lots of different things. My favourite filling is leftover vegan chilli con carne. Delicious. I like all your recipes.

I feel like for those of us in the US, switching out the hummus for some Kite Hill cream cheese style stead would be really good! Especially if you added a little extra seasoning. You might even be able to make something spanakopita-like with spinach!

Maddie, I have been subscribed for years and own your first cook book, but unfortunately I fell (badly) off the wagon towards the end of 2021; my mental health had taken a knock, I quit eating well (and eating vegan too) and have been sickly for the better part of a year now. The past couple of months I have lost a concerning amount of weight and am barely eating (MH, ADHD and full-time work and study makes me forgetful or not hungry); this week I decided that I know I can look after myself better and I want to do a bit better for myself. Naturally I’ve returned to your channel. I don’t have a lot of money at the moment and I feel guilty about eating, but I’m really glad to see so many videos about eating well on a budget! I love autumn and winter foods so much. Thanks for the videos. ❤️

That puff pastry would be fabulous with root veggies like carrots, sweet potato and radish. You could've also made a bean dip of whatever canned bean's and tahini for a great twist on your original blend... the possibilities are endless✨️

Hello, just want to share that I tried all of those recipes over the past weeks and they are amazing! The gratin made me discover a way to eat cabbage that I like (I usually truly dislike it) 🙏 Little plus: I served today the puff pastries at lunch with my in laws - whom can be quite picky - they couldn't believe how good it was, and asked me which store they could buy it from. That's a win to me ☺️
