I do something very similar for my wings... With one exception... After dredging the chicken I let it sit it the fridge for an hour before I fry them up. Sometimes they need another very light dredging after sitting. It makes them EXTRA crispy!!!

I used to fine ground all spices and mix it well with flour , I believe that will cover every spot in the chicken weather it is a wings or whole chicken

Ayooo Byron! Great video! Just one small thing about this video... An authentic Buffalo Chicken Wing is actually not breaded. They are fried up then coated. Not giving you a hard time :) but in case you ever were wondering or even saw this, probably won't... Not sure if you ever have gone to Buffalo, they were started at the Anchor Bar there, amazing place if you ever come out east, you should make a point to stop there, been a few times.

Where do you Dispose of your oil, cause when ever I make some of your foods to try, i have no clue what to do with the oil. I know NOT to poor down the drain, and since you worked in a restaurant i wonder where you take/put the used oil, cause im scared to re-use it haha. @ByronTalbott

The huge tweezers ...?! I used metal tongs for a long time, when ever I was frying something. But this year I switched to using regular (wood or bamboo) chopsticks. The tongs got hot during the cooking process, and depending on the mess they can become slippery. So these are things that never happen with chopsticks. This is why I switched. Im still amazed by, what I think looks like, giant tweezers in your video.

I can't get Frank's hot sauce in Australia, so I improvised and made my own hot sauce. It's basically to taste, so add more of one ingredient to compensate. Ketchup Soy Sauce Maple Syrup Apple Cider Vinegar Tabasco Sauce Garlic powder Onion powder

How about an asian week? Or if you're up for it a week for each type of cuisine: Chinese (or Chinese-American i.e. General Tso), Indian (Tikka Masala, etc.), Japanese (Ramen, Karaage, Katsu Don), Thai (NOODLES!), and Korean (BBQ of course and street fare). Even Vietnamese, though I don't know it well.

His oven is probably only set to 220 degrees; that's not burning hot.

The chicken needs to finish cooking. The oil crisps the outside but doesn't cook the inside of the wing.

Hey these look great but i went to awesome asian influence restaurant and they had the most amazing "Lava wings". I am a wing enthusiast and there was a different kind of hot about the lava wings that i could'nt nail down. hands down best wings iv had. is there anyway you can look into that and maybe show a recipe of your own in contrast to these wings. thanks

Drain the fried wings on a rack as opposed to paper towels. They won't get soggy that way. Not an authentic recipe but I Ike it. I like the aioli and the use of sugar in the sauce. Thanks for the nice recipe.
