I made this today from fresh squash in the garden and sliced them on 1, then microwaved it for 4 like you said for a soft layer. I should of probably used more spinach. I used 1 regular Spanish onion & I didn’t have yogurt so I used some sour cream as a substitute. I feel like maybe some panko on top would of be nice for a crunch. This would be ideal for a brunch. Thanks for sharing it was fun to make.

I wonder for anyone not wanting ricotta if they could add cream cheese into the sauce…I don’t always have ricotta but I always have cream cheese

I did this recipe and spent almost 3 hours in all the process! I followed all the steps and the result was not very good, at the end it's like to eat butternut with just a little something else, because the spinach is not a thick layer. To cut the butternut in slices is not easy, it's very hard, takes too much time. So much time and ingredients (several cheeses) for a poor result :(

The squash should already be prepped ie mostly precooked -so it should be soft and fairly easy to cut !

Butternut squash is really firm for sure. She uses a mandolin slicer which has very sharp blades. Unfortunately, she does not show this process.
