This butternut squash recipe is an easy and tasty dish and it's quick to prepare. You can cook the squash on the stove top in a skillet in just 10-12 minutes with only four ingredients. You can also add a little sugar as well, but that’s entirely optional.

Ingredients for Easy Coconut Butter Squash Recipe
1 BUTTERNUT SQUASH
1 can COCONUT MILK (or less if using a smaller squash)
SALT and PEPPER (to taste)
2 Tbsp SUGAR (optional)
2 Tbsp OIL for cooking
How to Cook Butternut Squash in a Skillet
When buying a butternut squash, choose one with a smooth, creamy, blemish free skin, and also one that feels heavy for its size. At home you can store the squash in a cool dry place and it will keep for 1-2 months.
Butternut squash has a fairly thin skin, so it is easy to peel, in fact you can easily peel the skin with a potato peeler, or just slice away the skin with a sharp knife.
Wash a peel the butternut squash. The squash has a cylindrical top and a bulbous bottom, and I find that cutting the top away from the bottom makes it much easier to cut away the peel.
Once peeled, slice the squash lengthwise in half.
The bottom bulbous end will have a cavity filled with seeds. Take a spoon and scoop out the seeds.
Chop the squash into roughly ½ inch squares or smaller. The cut squash pieces should be roughly similar in size for even cooking. The smaller the pieces, the quicker the dish will cook.
Heat oil in a skillet on medium heat.
Add in the squash and toss with the oil, then cover and cook for 2 minutes.
Add salt and pepper to taste, plus a little sugar if desired, but this is entirely optional.
Stir, cover, and cook for 2 more minutes.
Reduce the heat to medium low.
Uncover and add in the coconut milk. I generally use an entire 15oz can of coconut milk, but for a smaller squash you might use less. How creamy do you want your squash to be?
Simmer gently for 4-6 minutes until the squash is cooked to desired doneness.

This was my Chef Buck gateway recipe. I watched it and then made it and now I have watched just about every video on the channel! This is still one of my favorite. We have this almost every Friday night with steak and a good Cab. It is just so hard to beat! And now my kids are all making it and i am making it for guests tonight. Love this recipe!

Oh I LOVE YOU GUYS! I swear you two are my go to for easy, fun dishes! I picked up a huge butternut squash just because I love this time of year and squash of any kind is so good for you! Now that my kids are grown I can eat whatever I want! I made a beautiful pork tenderloin with indian spices EXTREME CURRY and this was perfect for a side dish! It didn't take away from my BEAUTIFUL TENDERLOIN because it was simple and the coconut milk was key! Thanks!!!!! Once again Chef Buck and Camera Girl saved the day! New dishes galore!

Thanks I have had a large butternut squash in the fridge for a few days now, and need to work it over. I have not done up a butternut squash before. Growing up, the folks never picked one up at the store to try it out. This is something alien and weird looking to my kitchen which is down to a 10 electric skillet and a hot pad, sublimated with a toaster oven. I am inspired enough to get that monster looking gourd out of the fridge and fry it up. I may even get venturesome and chip in a half a can of spam.

it's a tasty squash--especially as a soup--If I'd have had a hand blender, I could have added the rest of the canned coconut and turned this dish into a nice butternut squash soup, which is one of my favorite ways to eat it

I've fried up butter nut squash adding bell peppers about half way through (after 6-8 minutes) then added about 10 ounces of polska kelbasa and chopped tomatoes and appx 1 1/2 to 2 cups hot water and a teaspoon of chicken soup powder and let simmer for 8-10 minutes more. Hearty eating.

we've been traveling and doing a bit of chores the past few weeks, so I haven't gotten on the computer to edit my videos lately, which I'm never happy about--makes me feel like I've missed out on a lot of free therapy! when I think winter squash, I generally don't think quick cooking time, but butternut squash is so easy to peel and get into a skillet, it's perfect for an improvised meal

butternut squash is perfect for soup...I need to get an immersion blender for my traveling kitchen kit; I'm surprised how many kitchens don't have them, and it makes me realize how much I like to use an immersion blender and miss having one on hand

@@ChefBuckRecipes I tried to make butternut squash soup the first time without an immersion blender, and that was enough...what a mess....Immediately ordered one on Amazon...they aren't very expensive...well worth it....I did find out that you need to keep it immersed (per the name), or you will also have a real mess....LOL

Talk about eatin' "good in the 'hood"! I made these and put them on a bed of quinoa and sauteed mustard greens. It was a great savory, sweet blend with the coconut sugar and balsamic vinegar. I skipped the coconut milk and they cooked up just fine! Thank you Chef Buck for another winning recipe!

You’re back! Missed ya the last couple Saturdays. I JUST did your pad tai spaghetti squash last week! That butternut would be good in the peanut sauce. And the kabocha squash? Oh my gosh it’s my FAV!!! To me it’s more like a potato. Less sugar and calories than butternut, more protein than a potato. MAKE A CHEF BUCK DISH WITH IT!!

thanks!--glad you liked the squash pad thai...spaghetti squash is probably the variety of squash that CG and I buy most often. I've never cooked a kabocha squash before...I bought that kabocha to give it a try, but I haven't cooked it yet...the good thing about all these winter-type squash is that they will keep for months if stored properly...my plan is to roast the kabocha up in the oven with a little oil and seasoning

I'm going to give it a try. I love all types of squash. I think I will cook a big one and set half aside and just do half with the coconut milk. Sometimes I am not crazy about stuff with coconut milk. My hubby will love it though and I hope my arrow mind says yummm

I made it for my mom with the coconut milk and she liked it, but I think I will leave out the coconut milk for her next time, 'cause she'll like it more, I think...she considers coconut to be an "exotic" ingredient

you can definitely use butternut squash in a curry---everything is great in curry! And you can freeze coconut milk, although I never have...it was a bit annoying not using the entire can of coconut milk for this video, but I just didn't need it...I generally buy a squash much larger than the one I use in this video

I do something similar with rutabaga sans coconut milk with onions garlic and splash on chicken stock and wine if on hand.

man, rutabagas are sooooo good...I ate so many rutabagas when we were up in Canada that I can't see the word rutabaga without thinking of Canada, which seems weird to me since I'm from the southern USA, and rutabaga is a common offering on southern buffets, or at least the ones we frequented when we lived in North Florida

I eat the skin! Same with acorn squash! And roasted acorn squash seeds are unbelievable there’s so much better than pumpkin seeds I don’t even know why people eat pumpkin seeds are like little pieces of wood chips
