Great video as always :) Quick tip: Don't be afraid to fill up your oven with other veggies such as cauliflower and carrots when you're baking the squash. They last a few days in the fridge and I often throw roast veg into salads or just snack on them. Leftovers can puree it down into a tasty dip or just thrown in the freezer for later.

+Mind Over Munch I like peeling the whole butternut squash. Throw the peels away. Continue peeling the squash to make a type of butternut squash noodle. As you peel it, they curl up and are so cute. Then I use a lightly greased casserole dish. Toss all the "noodles" in, stir in some meat sauce/pasta sauce(I like using ground turkey or ground chicken for the meat sauce). Spread some croutons over the top. Add a little parm cheese and top with some cheddar or mozza cheese. Bake in the oven. It's so delicious. My whole family loves it and has much less calories than a real pasta or lasagna dish. Oh yeah!!! Don't forget to save the seeds!! :D :D

Your explanations on how to cook them is straight forward and doesn't need any kind of strange ingredients (translation: something I don't already have in my kitchen). - - Edit: I cut it in half and baked it. I served it with butter and cinnamon as a vegetable side dish rather than regular baked potato.

I like butternut squash soup too. I roast (olive oil, salt cayenne pepper--to taste) the squash, onions, garlic and a Granny Smith apple, peeled and cored. Once done, I puree all ingredients with homemade veggie stock. I make sure to cube some of the squash for texture. I have it with a piece of artisan bread. Good stuff. How do you make yours?

1 cup mashed, cooked butternut squash 1/2 teaspoon salt 1/2 teaspoon freshly ground black pepper 1 pinch cayenne pepper 1/2 cup mascarpone cheese 1 egg yolk 1/3 cup grated Parmesan cheese 1 (16 ounce) package round wonton wrappers 2 tablespoons butter 1 clove garlic, unpeeled chopped fresh sage to taste 1 tablespoon grated Parmesan cheese, or to taste Place cooked squash into a mixing bowl. Add salt, black pepper, and cayenne pepper. Stir in mascarpone cheese, egg yolk, and 1/3 cup Parmesan cheese, mixing until the filling is smoothly combined. Place a wonton wrapper onto a working surface. Wet the tip of a finger in water, and run it all along the outer edge of the wonton skin to moisten. Place about 1 teaspoon of filling in the center of the wonton. Fold the wonton in half to make a half-moon shape, and press the edges to seal. Repeat with the remaining wonton wrappers. Place a deep skillet over medium-low heat. Stir in butter and unpeeled clove of garlic. Remove garlic after two minutes and continue on low until butter is slightly brown. Meanwhile, bring a saucepan of lightly salted water to a boil. Drop the filled raviolis into the boiling water, a few at a time, and cook until they float to the top, about 2 minutes. Drain the raviolis, and transfer them to the skillet. Turn the heat under the skillet up to medium-high, and cook just until the raviolis are infused with garlic flavor, about 2 or 3 more minutes. Sprinkle with chopped sage, more black pepper, and extra Parmesan cheese to taste.

My favorite way is to roast it cut in half lengthwise and then make a little savory (or sweet if you want, maple syrup and cinnamon, yum!) bread pudding mixture and fill the cavity with it. You can mix in a little lean sausage, sage, rosemary and a nice seedy bread with some egg and milk or water, bake it just like normal (making sure it doesn't burn, so you might want to cover it in foil when it starts to brown) and it's delicious! Plus you can get a little protein in without having to waste another pan!

No not all Australians use sugar, or butter. I am shocked an aussie would think of using sugar on a naturally sweet food

Oh my goodness! I just did four big butternut squash in about one hour!! Thank you so much for the video. Years and years ago I helped a friend do these for a farmers market - we peeled and chopped those horribly hard shelled things and I swore I'd never do another. Well, thanks to your super video, I am converted. I used the nicrowave method - 5 minutes each, cut, seeded, peeled and chopped all four in under an hour! Now the eating part :) You are amazing, thank you, thank you. - Bev.

I've used your 3rd method previously but after I diced them up, rather than in the oven, I've put them in my smaller crock pot with the temp turned to medium for about 6 hours. Frees up your oven during the holiday cooking. ! 😊

I would recommend that you should not put olive oil on it if you are going to bake it at 400° F, as this is beyond the smoke point of olive oil.

yes, light olive oil is fine though as it has a higher smoke point. I would avoid using extra virgin olive oil at high temperatures.

Very engaging presentation here, my friend! I'm a 1st-timer, prompted by my friend who frequently Bakes a Butternut. My local store has resisted my quest for emulation by being sans-squash for the last 4 shopping ventures, either whole or pre-cubed. Today, aha! Success! I'm quite glad I found this episode of yours and will proceed amply advised. Thank you!

I just came home and my retired dad (Henry) showed me this video that he used to cook butternut squash (the 3rd method). We're about to try it now. Just wanted to say this video was so easy and fun to watch. We'll definitely be back to see what other videos you have.

Thank you so much. I make my baby her food and decided to do squash and breastmilk purée. I just didn’t even know where to start with the butternut squash. I shall cook it whole. No additives. This method is brilliant and much appreciated. Thank you so much.

First time: Will attempt to microwave to soften, cut in half, then roast. Great guide covering the common options. The PDF sold me on the channel. Few KZbin cooks do that, but it can be very helpful. :)

I saw the video in my feed earlier today and could't wait to go home and watch it! I was SO hoping for you to make a video about butternut squash. I am definitely going to try the full-thing cooking method, because peeling ot is a pain for me as well. I like making a creamy soup out of it: I dice and roast it with apples, onions, herbs and cinnamon, and then in the blender they go. I decorate with its own seeds ans raisins. Perfect ans cozy for fall evenings!

+Belladonna Took yay! That's so cool, thank you! The roasting whole is seriously the easiest way! I scoop the goodness out of the squash once it's cooked and use it for soups all the time, delicious! :) Yours sounds fantastic!!!

Thank you Alyssa , you are Awesome!... Most squash (except for zucchini) lend themselves nicely to cinnamon, allspice and nutmeg!(it's best to buy them whole and grind them yourself!) Any of 3 oils can be used with no problem: E.V. Olive oil,M.C.T.- Coconut oil or my fav... Buttah!...and to the 1'st timers concerning cutting.Always use a sharp knife.Dont force the blade if it resists. Use several small incisions at a time to form a dotted line then keep on retracing your intended path until gradually the divide is complete(no hurry no worries!) and last but not least, try not to use your weak hand (opposite of your dominant) to press down because sooner or later slippage is imminent! 😫... so Happy Baking! 😋 BTW since Butternut has sugar in it, it's always recommended to balance the flavor with the sprinkling of salt! You'll be glad that you did! 😉👍
