Don’t be scared of canning. The trick is to research and know why you are doing steps or adding ingredients. There is a neat dose of chemistry and physics in it. Don’t take shortcuts. Be sure to water bath and watch your pressure gauges. There are so many items now that make it much easier and less frightening. For the record: I’ve been canning for 24 years (taught my great grandmothers ways via my grandma) and have never had a pressure canner e plods or made anybody sick.

For those who've never had it, I hadn't either but it's great! I was introduced to it on toast (by way of those little jam packets in diners) from a nice older stranger I shared a table with in a packed restaurant. I asked where he ever got the idea and apparently his mother was a fan of it. I don't know if she used the canned "jelly" or made her own, but thank you for posting this. Now I can try it again with a home made recipe ❤

I can whole cranberries as well. It’s the best. The Ball canning books are important to follow for food safety. I make my own extract. It’s now over two years old. I pour the jar water back into my water bath. I personally wipe the rim jars with vinegar. Yummy

Oh Kandye..just pour the hot water back in the pot 😊 so you don't have an accident. I've been canning for decades and I still use the Ball Blue book! And rings just go on finger tight. The lids/seals go 'ping ' when done 😊

So excited to try this! Several years ago, I got ambitious and for the first (and only) time in my life, I canned strawberry jelly and gave it to the neighbors as Christmas gifts. I loved it! But it was hard work and the strawberries, being out of season at Christmas time, were super expensive! What was I thinking? LOL... I just didn't know of any other type of jelly. I was young and KZbin was new, so strawberry jelly was the only DIY video I found back then. But THIS! Now this is a recipe that I am willing to revisit my canning experience with, lol. Thank you Kandye. One question, though: So, is the burner still on keeping the jam warm while you put it in the jar? I'm afraid of it getting cold, if it's not, but I'm also afraid of it burning if it is. That's the part that is kinda worrying me. Advice? :)

Thank you! I turned the burner off so not to burn. It's such a small batch you'll get it in jars before it cools off. Also you can put the bowl obmver a simmering pot of water to keep it warm.

Hi! A couple of questions. First, does the emersion blender put air in the fruit mixture? Second, can you use orange zest? Do you think making a double batch would be too much at a time? Looks really good and just what I was looking for :)

No, it doesn't aerate the jam and yes by all means use orange zest if you have it! You can also use a blender or food processor to puree the fruit, or leave it chunky like a chutney, or serve it chunky as your cranberry sauce at Thanksgiving and Christmas.
