This super moist FRUIT CAKE recipe completely changed my mind about fruit cake!

Never in a million years did I think fruit cake would make it to my top 10 favourite cakes of all time! I literally despised fruit cake growing up, always finding it too dry or having too many sultanas. UNTIL I developed this super moist fruit cake recipe that is packed with fruit, nuts, dates and so much more!
INGREDIENTS LIST:
For accuracy, I would recommend using the gram measurements provided as those are the exact quantities I use. Cup measurements are given as estimates (based on US cup measurements) to make it easier for those who do not have a scale.
Fruit Cake
▢¾ cups (170 g) unsalted butter
▢¾ cups (150 g) soft brown sugar
▢2 cups (350 g) dried fruits - I used a combination of sultanas, raisins, currants, red and green glace cherries and citrus peel (see note 1 on blog post)
▢½ cup (100 g) dates - pitted and cut into small pieces, see note 2 on blog post
▢⅔ cups (166 g) store bought sweetened orange juice - like Just Juice, Tropicana etc.
▢1½ tbsp orange zest - the zest of about 1 medium sized orange. The juice of the orange will be used later in the syrup.
▢2 tbsp (36 g) molasses
▢1¾ cups (210 g) all purpose flour
▢1½ tsps baking powder
▢½ tsp salt
▢1½ tsps cinnamon powder
▢½ tsp ground ginger powder
▢¼ tsp nutmeg
▢1 tsp all spice
▢¼ cup (52 g) unflavoured vegetable oil - I use canola oil
▢3 large eggs
▢1 cup (100 g) walnuts - halved
Orange Syrup/Glaze
▢3 tbsp (50 g) freshly squeezed orange juice
▢1¾ tbsp (20 g) white granulated sugar

I am from the Caribbean and in the absence of alcohol that we use..I can suggest you use any non alcoholic wine and pour it over the cake as you remove it from the over. Later as it cools wrap it in plastic wrap..it doesn't matter if it is warm still..and leave it for a few days. Taste the difference.!

I loved the way this was presented. User friendly. Very well planned and executed.There were no boring sections of painstaking chopping, measuring etc. One of the rare youtube cookery demonstrations I have watched without jumping the boring parts. I made this cake a few days before Christmas and finished off the last piece today. Ingredients for making a second one are on counter in my kitchen at this very moment. The flavors of this cake take me back to my childhood when my favorite aunt always made fruitcake for the holidays. No one in the family carried on that tradition after her generation was gone. In the intervening years I occasionally resorted to buying fruitcake when the craving for it hit. I found this easy to make (except for the 48 hours of wait time before tasting it!). By far the best plum cake recipe I have come across... Guys please don't hesitate to try this. I am a homebaker and I was given an order for 10 plum cakes. Thank you MK. I made this cake twice now within a couple of days and everyone that tried it said it’s the best fruit cake they have had. I only dropped the sugar to 100g and the sweetness is quite perfect. Since we don’t use alcohol in our cooking I truly appreciate your recipe not using any.

I totally understand mk you not using alcohol in your recipe. I think it awesome your cake. I tweaked As a born and bred Catholic I boiled the fruits in 1/2 orange juice and 1/2 inbrandy. The end result was super.

So happy to hear you've been enjoying the recipes :D and I used an 8 inch tin for this recipe but you could use a 7 inch tin you just need to make sure it's high enough (3 inches or more) and may need to adjust the cooking time. Still check at the 75 min mark and then if it needs more then bake for longer :)
