as a retired furniture maker who predominently worked with hand tools, i look at so many of these sharpening systems and smile. it takes me less than a minute to sharpen a chisel or a knife to a razor edge. no jigs, just a couple of diamond stones and a strop. learn to freehand people.

Awesome review and clearly showing the results Andrew. I'm definitely going to have my wife view this, i know those rolling sharpeners cost alot, but a quality one is definitely a great investment 👍🏻

Thank you! Yea, sometimes you don’t realize how dull your knives are until you start maintaining them regularly. The rolling sharpeners are very beginner friendly.

get a diamond stone and learn how too use one freehand. do not waste money on jigs when with very little time you can learn to do it yourself.

I greatly appreciate you using the tester correctly! It has become far to normal to use it incorrectly and use other not very good sharpness tests to become trendy and make knives or their sharpening look better than they actually are. There are some that use that to promote their sharpener, especially like with Rui knives to promote his pull though sharpener. He especially markets it for cheap knives, but doesn't bother to do edge retention tests or show how much steel it shaves off. A decent or even good cheap knife can last a lifetime and cut extremely well, but you have to treat it like a more expensive knife. Some knives will act like a cheap knife, but others when taken properly can be a very solid tool that will take and hold a sharp edge, and especially if you properly apex, refine, and deburr the knife and find the best edge angle to maximise cutting performance and edge retention. Going from memory, Project Farm uses that tester correctly. Considering all the testing he does, it doesn't surprise me. At least now I know what to look for when I watch other videos and if they use it. Thank you for today's knife sharpening lesson.

Yes, he uses it correctly. I’m a huge fan of his videos. A really sharp knife will cut the wire quickly, but you should see the numbers going up on the scale for at least a second or two. If you don’t, the person likely pressed down too fast.

Looks like a pretty fair sharpener......But, The only definitive test for a RAZOR sharp knife is to cleanly shave your face as you woulda regular razor. And there are videos of people shaving with a knife. Most people who regularly sharpen knives don't need a gadget to rest sharpness.

That’s NOT a butter knife. It’s serrated. Also, the steel in that knife is SIGNIFICANTLY softer than a carbon steel chef knife. Therefore, that knife won’t hold that edge. You might be able to get a butter knife as sharp as a razor, but it definitely will not stay that sharp and will lose that edge in short order due to the composition of the steel.

It’s technically a table or dinner knife but people call it a butter knife (at least where I’m from) - I know actual butter knives are different. The point of the test was just to see if I could replicate the sharpening results in some of these viral videos made by sharpener companies - there’s no practical reason to sharpen this type of knife.

@@PrudentReviews agreed. It wasn’t a criticism of the test per se, but rather an elaboration of the differences in knife steel quality. I’ve sort of gone through a similar sharpening journey with a new chef’s knife that simply didn’t hold an edge as long as my old Zwilling with the Friodour tempered high carbon steel, which I wound up going back to due to the longevity of the edge. Lesson learned.
