That ist THE BEST video about the Horl rolling sharpener. I'm researching for a while now and have seen videos in bigger channels. Why is it so good? Simple: a) He says has used the sharpener himself for a while. They all do. b) But here you can see the wear and tear on the Horl on the video. This thing has done its work. c) Real world tricks on how to use the horl or work around his limitation. No question, that es speaks from extensive experience. d) the video is focused on information, not on beauty. The video still looks good, but its not glossy, the information provided is.

Dear god just buy a Chef Choice electric sharpener instead. Same price as this and is going to actually function the same for literally any knife you try to sharpen with it and without the DIY aesthetic most home cooks will not want to deal with with a Worksharp. I literally do not see any reason to own this product if you actually consider other options aside from JUST comparing it to a whetstone, like Prudent is. This is like an overpriced novelty gift you'd get for a cook who already has better.

If the drum was a smaller diameter than the rolling rings, your hand could be against the back side of the rings/discs to help prevent your hand slipping into the blade. They should have an extension piece with holes for the feet to raise the holder for larger knives. You could use 2 expensive bases for longer knives.

Whoa, those prices are insane. You could buy the worksharp professional setup for less than a horl and the extra stones. You could buy a wicked edge GO or a tsprof. All of which will do more knives than the horl. Horl doesn't work for pocket knives or smaller knives, or large knives. Literally every other fixed angle sharpener is cheaper and will do more. I can't believe the price of this thing. No wonder it's marketed to non knife people.

@@Firevine yeah the precision adjust (base model) is what I normally use. They run 50-60 bucks and they're excellent. Lansky also makes a good one for 70. Even the worksharp precision adjust professional is less than the horl and stones, And it's a far superior product. They market these things to non knife people and it seems to be working. But they'll be disappointed if they use any of the other options on the market. They all work better, are less expensive and will facilitate the sharpening of more knives. The ken onion powered sharpener is nice too, and it's like $120 bucks. It'll do convex, scandi and all that as well.

Do you have Woodworking Tools? Set up your table saw or saw with a long guide. Both will need a long guide. Cut a similar but bigger block of wood as Horl uses for their blocks. Route out some pockets for the Neodymium Magnets you are going to buy. Glue or press fit said Magnets into the pockets you routed earlier. I’ve never seen a Horl but I’m going to assume you can't see any magnets in their Holders, perhaps cut slightly more off than you normally would. Now after you have set the magnets attach your cover piece of Venner, small wood strip, etc, and now you have a Block that is not only longer, but you’ll be able to sharpen knives at any angle you made a Block for. Or you could just invest in a better adjustable sharpener, to each their own I guess. If you are scared of Japanese Whetstones there are guides like this one I found on Amzon (SHARPAL 194H Whetstone Knife Blade Sharpener Sharpening Stone Angle Guide, Chisel/Plane Iron Blade Honing Guide, Knife Edge Angle Finder, Knife Sharpening Trainer (Angle from 15° to 45°) Too be continued.

Looking at the video it seems impossible to sharpen your tip properly. I feel like this is a pretty significant limitation of this sharpener's design. Because you are relying on the angle guide, it will only work easily on a flat blade. Any curved blades (including common western-style chef knife) is not going to sharpen properly past the belly unless you keep adjusting the magnet over and over again. Also, with how the angle guide works, it's only going to work properly if you can lay the spine of the knife flush on the table, but you can't do that for a small knife or if you adjusted the knife to sharpen near the tip. If you introduced a slant when snapping the knife to the magnetic block (which is hard to avoid) the knife will end up poking out causing you to sharpen unevenly. You are basically forced to rely on guesswork when sharpening near the tip, but the whole point of such a sharpener is to not have to do that to begin with. With whetstone sharpening you can (have to) adjust the knife's angle near the tip and learn how that feels, and with a pull-through sharpener you can also make sure the knife makes full contact with it. With this design it seems hard to properly maintain full contact of the knife all the way to the tip without a lot of fussy adjustments. Eventually the knife will end up being sharpened unevenly. Edit: Actually, thinking more about the design, if you want to sharpen the tip at the same angle (which you should), you need to tilt the knife *down* to make sure the edge is parallel with the angle guide at the tip. On a table you just won't have room to tilt the knife down because you will hit the table. You can only do this if you put the sharpener at the edge of a table which is very unsafe. The fundamental design means you won't get a good proper edge at the tip.

In the end id rather use a bunka + a chinese chefs knife then a european chefs knife.. dont like rocking the bade anyways.. (dont need it that much for home kitchen use) I own 2 bunka's 2 chines chefs knifes and like 5 european ones.. (zwilling pro/ 4 star). Hardly ever use the european knives anymore.. easier to sharpen.. and more fun when cutting.. i sometimes use a 26cm eu chefs knife for cutting melons and the like but hardly ever grab it for cutting meat/vegetables.. I also own wetstones and a horl2.. its too much hasstle to get out the stones most of the time.. fil a tub with water.. soak them.. and then al them mess u get after.. aso on a stone u can make a mistake and ruin the face of a handforged japanese knive very fast.. its a much bigger learning curve.
@BrotherCheng10 ай бұрын
@@larsvegas1505I think that's fair. I just wanted to point out that this particular design is really going to work best for flat edges and if that's the kind of knives you use it's probably the best scenario. Personally I stick with a whetstone but I totally agree that it's a much higher learning curve / fuss, and you need to practice and make sure you have a steady hand to maintain a consistent angle.

Easy, simple, cheap and still the best way is a sharpening stone
@mountaindweller451410 ай бұрын
For honing I recommend using a vertical rod sharpener/crock stick. Very easy to use and great results. Only problem is depending on the one you buy, it can be missing angles. E.g. I've got a Lansky Turn box and it only has 20 and 25 degrees. You can buy a spyderco sharpmaker which has 15 and 20 degrees, but it's more expensive. Of course you can always make your own by drilling holes into a block of wood at your desired angle.
@-fazik-371310 ай бұрын
Lansky Turn Box is so much underrated it is crazy. I got 3-Angle, Lansky and other systems, stones, but still I come back to my beloved Turn Box. 3 Turn Boxes that is ... even got the one with long rods :D.
@mountaindweller451410 ай бұрын
@@-fazik-3713 Yes, it is so simple and fast to use, anybody can do it. A pull through sharpener is also fast and simple, but the result is not necessarily that great and it can marr the surface of your knife and can actually be surprisingly difficulty to use correctly (dont laugh lol) because often you're unsure if you're pulling through correctly as the device is intended. That said I believe in the industry they just use pull through sharpeners, so if you don't care about the look of your knife and just want to work, probably a pull through is the way to go. A honing rod is also fast and simple, but can be difficult to get a consistent angle. And what if you want to be more precise and do e.g. 15, 20 or 25 degrees? Then you need a lot of practice to hold the knife correctly. A crock stick eliminates most of these problems because you just have to hold the knife vertically and move it up and down! Furthermore it's very very simple to take out and clean. In fact the Lansky turnbox is quite small and looks like a wood decoration so you can just leave it in the kitchen in the window or something. I'm not trying to sell anything, just my conclusions and solution after trying different stuff. As for the Horl sharpener one problem is that it magnetizes the knife which makes steel filing residues stick to the knife during the process of sharpening.

I got an imitation Horl for my mom.. it's good enough.. but its price!!! LOL yeah no for $30 more I can get a work sharp & that is one of the best things you can own.. I use whetstones.. & I have well over $700 in stones at this point. the only thing about the Horl thats good is the grits. but for your cheap everyday kitchen knifes, the under $100 each a knockoff version will be plenty with a strop!
@KimmoJaskariАй бұрын
The knockoffs are way worse and should really not be considered. Also, pull-through sharpeners are absolutely not the way to go, they just savage the edge. A good ceramic whetstone, sure, but that requires skill to use well. Either way, the Horl is for casuals, where it does an awesome job. It's very hard to fail, and the 400-grit disc is perfect for rough and ready sharpening. Goes fast, then the ceramic disc on the other side to deburr and you have a very serviceable blade. Obviously an expert with 1000 grit whetstones finishing with 5000 grit and a strop will outperform, but the operative word is "expert".

I am a bit perplexed as to why Horl doesn't produce more angle blocks with a wider range of angles. I have a set of Wusthof knives. The factory edge on a European style Wusthof is 14 degrees, which is pretty close to the 15 degrees of Horl. But my Santoku has an edge angle of 10 degrees. I use my Asian-style Santoku all the time, and I'd hate to change its edge to 15 degrees. I can't imagine when I'll ever use the 20 degree side. It seems like selling a variety of angle blocks would be easy and make these sharpeners more versatile.
@PrudentReviews10 ай бұрын
Totally agree. I would guess it’s coming soon.
@mikehouser758710 ай бұрын
It’s because the angle on the blocks is just a number and using the 20* block will sharpen one knife at 18* and another at 24*. This is because the angle on the blade from the spine to the edge will vary from knife to knife and that variance will change actual sharpening angle on the edge. Sounds like you have some fine knifes… I would take the money and your knifes to a “reputable” sharpener or send back to factory for resharpening every couple of years and invest in a quality ceramic honing rod to keep them tuned up between full sharpening. You’ll save money in the long run and your knifes will love you back with many more years of useful life. You’ll be happier too!
@AzTurboMini10 ай бұрын
@@mikehouser7587how did you come up with the angle changes with different knives?
@mikehouser758710 ай бұрын
@@AzTurboMini It has to do with a few factors but let’s take an easy one first. A knife has a spine and an edge. The spine is the top part or dull side of the blade opposite the sharp cutting edge. If you take a heavy duty use knife the spine is very thick (wide) and the blade tapers from thick to the thin edge. There is an angle in the blade from the spine to the edge. If you take a fine cutting knife the spine is thinner creating a different angle from the spine to the edge. Putting each blade on a 15* block will result in the blades (with their own built in blade angles) will result different true blade angles relative to 90* which is the angle the roller is attacking the 15* of the block +/- the built in angle of the knife resulting in something other than a 15* angle of attack. The problem becomes even more complicated if the face of the blade from spine to cutting edge has compound or multiple angles on it. Impossible to get any precise angle control with this system. In the world of knife sharpening there are no new mousetraps only new mice. Not selling them but edgepro has some good videos explaining sharpening angles and how to account for precise angles. This is just the tip of the iceberg. Good luck and treat your fine knifes well!
@mikehouser758710 ай бұрын
@@AzTurboMini just one other suggestion…. I would never use a new sharpener on one of my good knifes. Made that mistake twice in my life and trashed a couple of cherished pieces. I live in Nebraska and we have garage sales, thrift stores, and auctions. I go to those for some “decent” old knifes to practice on. By decent I mean like old Chicago Cutlery with good steel but the wood handles are cracked from age or dishwashers. Stamped cheap modern knifes won’t work but good older steel blades are great to practice on or to see if a sharpener is all it says it is. Even if the sharpener is good I would still practice on other knifes first. Lots of time, trials, and tribulations so like I suggested if it’s just for you and your fine knifes take to a pro every 6-12 months and touch up daily with ceramic or smooth steel and your life will be much happier. Now if you’re old like me I trade sharpening knifes for electrical and plumbing or automotive help and that works out great in a barter system.. :)

For the angles, I was sitting here thinking that it would be relatively easy to build custom magnet blocks cut to the angles you wanted on a miter saw then routed out and magnets added. While yes, that's an easy job, most people with the skills, desire, and know how to do that probably aren't the target audience for this tool. I purchased a Wen 1/2" belt sander recently at a tool close-out store that was closing down. Just $13! Even full price is only like $45. I clamp that into my benchtop vise with a 1000 grit belt and I'm pretty sure that even my hammers are razor sharp now. Bit of a learning curve though and I don't recommend it to the general public.

You don’t raise the knife on the blade and let it float if it’s shorter than the magnet - that’s dangerous. Put a book under it.

It is a gimmick at best. He does not try the paper test for a reason. 2 Minutes on each side? With an fixed angle sharpener you use 15 strokes on each side and call it a day. The knife does cut better the tomato after Horling but still is dull since you see the pressure applied to the fruit. This is at best an 19.99 USD item people buy for fun. How does it hold real allmost non magnetic stainless steel knives? The tests are done with D2 steel most likely or highly magnetic knives. Same problem as with induction cockers who need specialised cock ware. Overpriced german brand name.

The deal is. They make it appear quick&easy, when it is actually long&cumbersome...and quite frankly doesn't work, as you think it would.

😂 it’s called a cimeter. It’s used for butchering large pieces of meat. I wish I got a chance to use it more than I do.

Thank you for the video.. my wife specially learnes alot from your information. We both would like to be able to afford to buy most of the products you mentioned before... but we will definitely try to save to get a few of them. My wife is now a big fan if German made knives.. if possible could you check on a company named "Astercook" my wife and I purchased that some months ago and their German made and have the weight and knives have a " bolster" it is a set and also have 6 steak knives which are the best knives we have used. The handles are acacia wood with a coating on it did the company recommends that you wash the knives right away and dry them so that the metal and the wood handles don't get spotting on them especially on the metal. Thank you again for the review

I have not heard of that brand, but I’ll look into it. Thanks for sharing.

@@PrudentReviews your welcome.. my wife and I we're at the time looking for a pretty reasonably priced knife set and we happen to notice some on Walmart which were a little pricey but they were saying that they were once said it was a German made and then another one said that it was like Germany but it was in china. And this one we came across it was I don't recall where we purchased it from, but it did say it was German made and the information that came with the knife set was pretty well informational but did not give too much specifics about the company or the knives themselves. But he did say on how to take care of the knives how the angles it was on of the blades edge. And what the company had mentioned in their information that you really didn't need to sharpen the knives for about 2 years if the knives were used correctly as in not using them on plastic cutting boards or glass cutting boards to use it on wood cutting boards specifically and not to use the knives on I'm cutting frozen foods.. which is mixed common sense right there. Even if Astercook isn't a great company my wife is happy with the knives. Thank you again for your informative videos on all the products you feature

@@PrudentReviews I just got it today. I am terrible at sharpening. I did the whole block of our knives in about an hour. Worked really well. Can cut a 16th inch slice of tomatoe with every knife. Took me a while to get the hang of it. You have to pay attention to when the edge folds over then switch to other side.

You’re right, there are many cheaper options. But many are poorly made, don’t roll smoothly, and have weak magnets. Horl isn’t perfect but they’ve built a solid reputation.

Please do not run your knives through a pull through sharpener. Theres a reason they are the cheapest option. You would be better suited to spend the same amount of money on some cheap diamond stones.
@discombubulate225610 ай бұрын
here's the thing. if you want simplicity, you not great sharpening, not a chief, and easy of use get this. it's expensive but easy to use and will last forever. you want cheap but good get one of those "knife sharpening systems" online for under $20. they take a little time to set up and a little more to learn but have more grit options.

This product is horribly over-priced! If you're the type of person who never sharpens your cheap knives, there's another MUCH cheaper and easier option to consider. Knife enthusiasts hate it, but you're not one of those. You want cheap, convenient, and easy, right? The Rada Quick Edge First, some negatives: . It provides only one blade angle, about 19 degrees. But you're not a knife person, you have no idea why you should care, right? . It is not suitable for use with harder "super steels". But you purchased your knives from Target, or the grocery store, or Smart & Final, or the dollar store, right? So you don't need to worry. . It doesn't produce the sharpest edge in the world (though still quite sharp). And you wouldn't know a hair-whittling edge if it sliced your finger off, right? I mean, you haven't sharpened your knives in so long you might as well be cutting with a child's plastic toy knife, right? . The sharpness doesn't last that long, because the edge isn't a highly-refined, smooth edge. You'll see under magnification that the sharpened edge is kinda chunky, full of burrs and teeth. But that's okay, because restoring sharpness is super fast and easy. . It won't, can't fix nicks. But so what? Now, the advantages: . It's cheap. Really cheap. . It's small, easy to store. . It's super quick and easy to use. So you've purchase the sharpener, and you're ready to sharpen a knife. What now? . You need to "re-profile the edge", which simply means you need the blade to conform to the shape of the space between the wheels of the sharpener. Just pull the knife through the wheels a bunch of times, using only light downward pressure, until the edge is sharp. This takes a few minutes, because a fair amount of metal needs to be removed from the blade. I've used as many as 200 pulls on some knives. Now give the knife a couple very light pulls through the sharpener while slightly tilted, first to one side, then to the other. . Start using the knife. . Give the knife about 5 quick pulls through the sharpener either before or after each use to maintain sharpness. It really is that quick and easy! You may find this sharpener to be a "gateway drug" of sorts. I personally have moved beyond the Rada sharpener, finally settling on freehand sharpening of my knives on diamond and ceramic stones. I've now spent far more on sharpening equipment than I'll ever spend on kitchen knives!

it's extremely expensive for what it offers. knife enthusiasts who actually take themselves seriously would not buy this. This product is designed for people that want to show they bought something expensive. A whetstone with 20 minutes of practice will yield better results and you can control your own angle.
