This is a great recipe. This is how I was taught to make it. I usually use ginger, bay leaf cinnamon, and cloves. I will try it with the orange peel next time

That dried leaf is not the bay leaf that you cook with It is different it has a strong sweet aroma we call it Christmas bush We use it it porridge etc

if you dry it it last very long too put it on a metal plate n put it in the sun keep turning it so it can bake after it's done it should be crispy then put in a ziploc bags or any plastic bag and tie it. when you ready to use just take out a small amount because it would very strong rinse it fast cause it would start letting out it's color and put to boil as she just did God bless.

It actually comes with the seeds off when I purchased it in St. Lucia. They cleaned it before selling.

Why do people add cloves to the sorrel drink?

Shine D cloves are optional - just like ginger ... we all make it differently and to our own tastes, I personally like it as I find it makes the sorrel have a nice taste that works similar to cinnamon :)
