I have said it a million times. Surf Perch tacos with fresh cabbage coleslaw is the way to go. Mushy fish doesnt matter as much with the crunch of that fresh cabbage.

My family is Dominican. We use to catch and clean the perch. Leave the head on. Remove scales. Dip in beer and lightly dredge in flour then fry until done. Serve over rice.

As I'm sure u know, the salt is going to draw out the moisture and firm up the fish, This technique is used to bake fish and it's NOT salty at all.

Yeah there's also the salt crusted baked fish but this one is was going for the thai style grilled fish. They cook most of the fish this way.

I eat these guys all the time freeze them for a couple weeks then salt and rinse well, grill or bake at 400 for about 30 min depending on the size firms them right up!

Looks good, that common sauce is often used for many foods and seafoods, except you forgot to add sugar and a little water to dilute it since fish sauce is salty.

Sucks about your pole. I thought I was the only one who fished on motorcycles! What do you ride? In Socal, I've been throwing carolina rigged with a jerk retrieve for the surf perch. I have a ton of luck with the gulp sandworms, and a good backup are the mid sized plastic grubs. I use motor oil color with red flake. As for the recipe, looked pretty good to me! I would have completely covered it in negi, tho!

Outdoor Chef Life hey that’s great we have an abundance of coastal foods if you know where to look such as paua (abalone), mussels, Kina (sea urchin), crabs, pipis and cockles, oysters, and many species of seaweed. If you are prepared to get wet you can often find crayfish not to far off shore. We also have many species of fish which can be caught reasonably easy from most coastal waters.

Newzealand is a very culture diverse country, you don’t see many people coastal foraging to be honest and if you do they are probably more likely to be foreigners, and in any case it is well within your rights to Collect what you can find. There is a daily quota, but this is far more than you will manage to eat.
