did an awesome shot on that opaleye.. nice! those saltwater panfish are tasty, abundant and and sustainable.. not a sargo or surfperch, btw, that's a fish called a halfmoon, Medialuna Californensis, a member of the sea chub family. either one are better tasting than a sheep for sure, I think

Another great catch and cook my friend. Catalina is gorgeous that looked like a lot of fun. Just a little tip for beginners that don't have this perfected like you trying out this filet method, always complete the final step of fully swiping the knife through separating the filet with the knife facing away from you to avoid injury. Thanks for sharing man!

(outdoor shef life could be a lot!!) . or just a "outdoor" feeling of cooking, like a grill or whatever. it doesnt matter. people love you and follow you for you skills! never stress, take your time.. fx several brinimg solutions or whatever. you could fx fish and brine outdoors and cook inside or "inside". people know you and therefor follow you anyways, a great chef like you can do everyting! just call the video like it is, like you do=) sincere greets from norway

you should hit up the kelp patties around the island next time you go to catalina. i just got back from from fishing catalina and got a ton of hamachi (yellowtail). they are under and around the kelp all summer long. recommend going back next summer. but you can also go to the channel islands in the winter for some epic white seabass and halibut. Sheephead are some really good eating as you already know, they just take on the flavor of whatever they are cooked with. great video.
