This salad is just amazing. I make this salad almost every week. This salad is good for on the go. Just squeeze some lemon juice and drizzle with olive oil, topped with grilled salmon, chicken pieces or even boiled eggs and lunch is solved.
For this recipe you will need:
1 ½ cup dried couscous
1 tsp cumin
1 heap tsp coriander
1 heap tsp smoked paprika
½ turmeric
1 chicken cubes
375 ml boiling water
2 tbsp tomato puree
2 cloves garlic finely chopped
2 tbsp olive oil
Fresh vegetables:
Cucumber finely chopped
Tomato finely chopped
Red bell pepper finely chopped
1 red onion
Bunch of fresh parsley
Some fresh mint
1 cup chickpea
11/2 cup cauliflower cut into mini florets blanched
Method:
1. First measure 1 1/2 cup of dried couscous and place it in a container (plastic box or a pot with lid). Add the spices coriander, cumin, smoked paprika and turmeric.
2. Measure 375 ml boiling water and add the cube, stir to dissolve. The measurement for couscous and water is 1:1.
3. Pour the veg/chicken stock to the couscous, cover and set aside for 10 mins.
4. Meanwhile, cut the cauliflower into mini florets. Blanch for 3-4 mins and set aside. Cut the other vegetables and place them all in a large bowl.
5. Mix the finely chopped garlic and tomato puree in a bowl and add oil.
6. After 10 mins separate the cooked couscous using a fork and then pour in the tomato puree mixture. Try to mix it thoroughly until all the puree is well incorporated. Add it to the vegetables.
7. Serve with lemon and olive oil dressing. You may want to use my recipe for the olive oil and lemon dressing it's on my video list
