I often thinks that most chef are wasting a lot of fish meat by throwing away the fish head and meat still on the bones... or is it only me who are brought up by poor parents...

I have never seen an Asian throw away a fish head the Japanese particularly seem to use them in their presentation if they do not prepare it to be eaten.

AMIT JHARIYA I think for adjust the moisture on the palm. Need to be moisten palm when make sushi for rice doesn’t get stuck. Not too much wet but not too dry. And it’s cool hum?
