It's because his native language. Each noun has gender, and when talking about it. You use the gender of the noun. So cheese is masculine, so when he says "he" he means it. And the language that follows is because of that gender of the noun.

Unless, however, it's going to break in a completely different direction than you want (which occurs with the smaller pieces), then you must guide its path. The cheese's formation creates different sorts of "paths" in which different molecules are more strongly connected than others.

I would like to meet the person that decided it was a good idea to take animal milk, add assorted cultures to help bacteria grow like crazy, let the bacteria turn the lactose into lactic acid, adding rennet to make it chunky, then store it for months or years for no reason... then returns and decides it's a good idea to break it open and eat the delicious interior. I'm so glad that disturbed person was born. Yum. Probably the cousin of the person who decided to squeeze some udders to quench their thirst.

You need to calm down. By simply taking the milk of an animal and turning it into a valuable food source for our world has nothing wrong with it. That's like saying it's wrong for a baby to take its own mothers milk after being born. It is in no way hurting the animal to take its milk.

That's because of feminine and masculine nouns and cheese is a masculine noun in Italian. He's thinking in Italian, so when he speaks, the word his brain is trying to translate, it becomes 'he'.
