Yeah I found him during the pandemic. He’s such a real chef with an invaluable knowledge of food and food culture. You’re not going to find many KZbin cooks with such REAL knowledge and experience in the industry. I’ve never seen someone cook with so much love

I have been watching this guy for years, even had the chance to visit and enjoy the food. He is one of the few TV chefs that actually gives thanks to his staff and assistants. This would be the perfect guy to learn from when you are interested in real cooking as a profession.

I was a big fan of jacks, and discovered his videos and loved how this man loved what he did so much. It showed in the manner of how he cooked, spoke to his customers and in every one of his mannerisms. He was a much, much loved figure by all of his fans. When i learned that he had passed, i had difficulty watching any of his video's, it was a tough time for many of us. Only recently have i returned to enjoy all of his many talents, and revisiting the many video's he left behind, theres a line in a song i know that sums it up for me. Suddenly, you were gone, from all the lives you left your mark upon. Bon voyage, daddy jack.

Be nice to your butcher is good advice, most people these days look at the selection in the case and don't even know to ask for what they don't see. My Mom taught me to always ask and I can always find what I need. Love your style !

I watch quite a bit of cooking videos and this guy’s are great in comparison. He gets to the cooking right away, and is very straight forward with the recipe while giving some helpful tips for your knife work. Plus all of his recipes are ones I would actually make at home. Bravo 👏. Keep them coming.

Dang man, I have been watching one after another after another videos of yours and could watch them all day. YOU are THE BEST on KZbin! I love it. I have learned so much from you Mr. Chaplin! You teach such great techniques that I had no way of learning before your videos. I can't wait to try a few of them. If I ever get up north I hope I can come by your Daddy Jacks and dine with you. I love how natural cooking is to you. You look so at home there and I would burn the heck out of everything cooking it over fire like that...lol I love how you just know how long its been cooking and how long it can go. That takes years and years. I hate the thought of eating "fancy food" from 5 star restaurants I cringe, but I would love to eat your food. This is the kind of everyday GREAT food that common people would love. Let me get back to watching your videos. THANK YOU for taking time out of your day to make all these videos for fans like me! Also like the Celery trick. Instead of one stalk at a time, chop the whole bunch and work your way down.

If you slow the video down there's also a trick with cutting the onions. His first slices aren't all the way through the onion, while it's still a complete ball. And *then* he cuts it in half.

good tip about laying the meat or whatever you have away from you but also , you can tilt the pot or pan so the grease runs away from you itself , allowing you to safely place items gently in the side holding no grease . It's a very small step to save your skin which will either take an extremely long time to heal from a grease burn OR ... just won't ever heal.

In sad to announce that Daddy Jack passed away on May 11, 2021. These videos he left behind are but a small part of his 62 year legacy. His restaurant Chaplin's, is located on 165 Bank Street in New London. From what I understand they are currently only serving Pizza.

Thanks for the great cooking lessons! You are a great chef! On a personal note, because I love you, you need to drop some weight! I have the same problem! I was 348, and this morning, Dec 8th , I was 268! If I can do it. you can too! I am pushing for 200. I am 6ft tall! I am on the Keto Diet! It is low carbs high protein! Lots of steaks and great salads! Lettuce, tomatoes, onions, artichokes, oil and vinegar, asparagus, one slice of whole grain garlic bread, kidney and garbanzo beans with a steak or hamburger steak for lunch and dinner! Boiled eggs for breakfast . I cook my steaks in cast iron with salt, pepper, garlic, and olive oil! this diet works because it satisfies my appetite! You should try it! It is Keto!
