Bananas Foster Ice cream cake | An ice cream rum cake made with one of New Orleans classic desserts.

New Orleans native Charlie Andrews demonstrates how to make a Bananas foster ice cream cake. It consists of a Moist and fluffy banana vanilla rum cake with a cinnamon swirl, stabilized homemade vanilla ice cream, topped with a Bananas foster, roasted pecans and a stabilized whipped cream added to the sides and on top of the cake. This recipe calls for 12 servings of cake. It's perfect for those summer months and it's also a different take on an ice cream cake, with a New Orleans twist. It's absolutely delicious. Here's some important notes This is a very delicate cake that requires time and patience to make. It is also created to hold it's shape when thawing. Rule #1- After you assemble the cake, do not cut into the cake. It must be frozen so it can set for 4 to 6 hours or overnight before cutting a slice. (No exceptions). Make sure you freeze the cake layers and ice cream 4 to 6 hours before assembling the cake. The whipped cream also need to be refrigerated for 2 to 4 hours before assembling the cake. Same with the Bananas foster, once it's cool, place into fridge for 2 to 4 hours before assembling the cake. You can also make everything 2 to 4 days in advance to make things easier. Do not bake and decorate the cake all in one day. If your kitchen is hot, 80 degrees +, do not assemble the cake. Do not assemble your cake if your ice cream is too soft or runny, or if the whipped cream is runny or weeping, or you didn't freeze your cake layers. Do not add the crumbled pecans on to the sides of the cake until the cake is completely frozen. Thaw the cake for 30 minutes to an hour before cutting. Thawing times vary depending on the temperature of the environment the cake is in. Do not thaw the cake in an area that's hot. You can also cut the cake into slices for a faster thawing time. You can also place the cake into the fridge to thaw as well. Do not leave the cake out for more than 2 hours. If you are transporting the cake, make sure you freeze for 24 to 48 hours, then place cake into a serving box inside of a larger box surrounded with dry ice. To cut the cake, heat your knife on the stove until it's warm before cutting into the cake. Even when you cut each slice of cake, heat the knife again and cut the other half of the slice on the cake. Keep the cake in the freezer at all times. Also you can also use store-made ice cream and whipped cream. Note- It may not be as stable as the ice cream, I made in the video and it may melt quick than usual. Hope this information helps. Thanks!

I really learned a lot from this recipe. He also taught how to temper eggs and although I already know that, I've saved this recipe. First of all, I want to taste this beautiful cake and yeah, the techniques he taught. I'll always set aside time to watch Charlie's videos, because he always takes his time to create these recipes, upload videos, give additional tips and he replies to the comment section, which is super helpful. Charlie does respond to old videos, so when you are cooking a recipe of his, he answers questions if/when you are stuck and rather quickly. Charlie is amazing, for sure.
