​@CharlieTheCookAndrews when I was a kid, there was a local chain of chicken places that was owned by a church and they were called Chicken Coop. It was always super crispy outside and super juicy inside. I never went to KFC until I was 21 because we always went to those places. My dad was a fireman, so he always got paid once a month, so the shop at the beginning of the month was the big grocery shop (if you know you know😅). We would go there for lunch before grocery shopping. I have still dreamt about this chicken over the years, and every time I head back home, I make sure to go there at least once. I've been able to duplicate the flavor by just sprinkling chicken with coriander and Goya seasoning with saffron. But I have never been able to duplicate the batter before. I do remember someone saying that they knew the chicken got sprayed with water (or so they thought) before it was fried. I like the way you combined the seasoning in the better but also on the chicken one more time before you put it in the oven. Definitely going to give this a try!
