He is fantastic! Makes me smile every time I watch him, plus OMG can he cook!!! My Grandmother taught me the basics of cooking since I was 8 or 9. The family used to have Sunday lunch at my Grandparent's house every other weekend and I loved watching my Grandmother cook. I miss her more than words can say. Her beef gravy was to die for and she took the whole recipe to her grave but I think I got about 80% of it. It's funny what you really miss as you get older, but I remember that pot of Gravy simmering & the smell was divine!

She did an excellent full cookery course on video in the '80s (when she was in her 'seventies) and it is superb for anyone who wants to learn the basics of cooking everything - right across the board. Some kind person once uploaded the entire video set to KZbin, it's worth searching for if you haven't seen it. An amazing masterclass in cookery from the great lady herself, each video focuses on two areas of cooking, eg starters, vegetables, fish and seafood, poultry, desserts etc. It's wonderful, can't recommend it highly enough.

Chef Jean - Pierre, I really enjoy your channel most of all the cooking channels. Many years ago I worked as a Sous Chef in a 5 German star hotel and learned technics from a French Chef. You practice what I learned then: with the freshest, finest ingredients the food must shine, not the trickery of a chef. Trickery is mostly a cover of a mediocre cook. I have so much fun and are learning more from you. Merci beaucoup, mille grazie!

But how is it “on a budget”? Choice strip steak is one of the pricier cuts of meat in any supermarket. $30 for those 2 steaks, $5 for lg mushrooms, 5 for potatoes 5 for pepper.onion 3 for spinach, $2 for fresh tarragon, 5 for butter oil and SP used ….add half a bottle of decent wine and we are up to $35+ per person.

@@HBSuccess if we're being realistic here, if you are on a budget, steak shouldn't be on the shopping list. It's become one of the most expensive items in the last 2 years. In my area I was able to get beef short ribs, trim them down and cook them like a steak and enjoy it, but even prices for that cut of beef has caught up. I hate to say it, i'm not on a food budget but I hate paying the prices for these shit steaks, I'd rather go buy a walleye or salmon fillet for $6 per person and make a side and a salad bump it up to $9-10 per person....much more reasonable.

I'm British and just bought a pack of two fantastic quality rib eye steaks from Aldi for £7.99. Yes it is a treat meal, but for me that's an affordable treat every few weeks - I certainly couldn't afford to buy the same steak from a butcher, who would charge at least double. Aldi is excellent for all food, but their choice, quality and cost of steak is amazing - they even do Wagyu steak now, which I haven't tried as it's always sold out, but like their rib eye has great reviews from foodies and is only a bit pricier. With the price of gas and electricity rocketing, steak is quick to cook which is certainly one plus for it - and chefs should be aware that many of us are now rationing our use of the oven. I recently heard of a woman who has her electricity on a meter. She cooked a medium size chicken, and was shocked to find roasting it had cost £11 in electricity! I am now trying to cook several items together in the oven to save fuel, eg meat, plus roasted veg, maybe Yorkshire pudding and sometimes a dessert too like a rice pudding (which takes one and a half hours, so I would not now cook it alone). Sadly this cost of living crisis will affect people in all kinds of ways. In the UK Summer is approaching, when the heating is off and we eat more uncooked foods like salads and generally lighter meals. But come Winter it will be a struggle for many to heat their homes, and cook, as well as buy their food. Scary times.

This man encourages confidence just by watching and listening to his cooking methods. He also makes me very hungry! Chef, if you ever feel like experimenting, when the steaks come off the heat to rest, place them in a metal cake pan (lightly cover with foil) and douse them with some splashes of Lea & Perrin Worcestershire sauce (adds salt). Shake the bottle. Makes a lot of excellent juice to pour over the steak on the plate.

You tell us it’s okay that we don’t use alcohol or a specific ingredient if we don’t normally have it on hand or “…not yike it!” as my son says. He’s diagnosed with developmental delays/disabilities & he has “issues” with some textures… but I’m working on introducing him to new tastes. There are some things I can’t do either lol like coconut & cooked peas lol. Our son likes watching you cook too.

I made the mushrooms and home fries as well. My wife loved the spinach in the mushrooms. And my kids wouldn’t stop eating the home fries. The Apple cider vinegar is a great addition! Thanks Chef Jean-Pierre for the new meal adventures every week!

If you are even 10% as energetic and fun as you are on camera in real life... You must have been a blast to work with and know in real life! I love the way you show us and talk about things, a very good example is at 15:00 minutes when you show us the ice cream scoop you use for an example! What a joyful channel to find on YT.

Hi, great video!!!! Tip for burns, cut an aloe leaf, put in freezer as is, I got a white hot spot from a oven burn that was so bad I couldn't feel it, when you apply the cut part , so it's the exposed gel, to your burn, it really works!! It thaws from the heat of your hand, but the gel bonds like a wonder! 1st time no scar..

Delicious. I really don't care about high tech cooking, but surely love this as I can make it by myself. I almost skip the video when you're using the oven, because I don't have one. But it can be skipped with thin'er meat.

When I cook my steaks I always let them rest under some bread. That way the meat juice can be soaked up by the bread and we can eat the bread. Yummy yum yum time.

First of all: The cheaper cuts - are often better, as they have more flavour. Secondly: When you cook potatoes cook more than you need - because cold potatoes are just precooked for the next day. You can fry cold potatoes in butter - it won't get that hot, because the water will cool and the potato slices will soak up the butter and they are ready when they get the slightest tan. Excellent with a hamburger patty. Thirdly: Nice tip to use taragon for flavour and thyme for "background noise". Fourthly: The pan should have splashed port wine on the pan and have it as an extra sauce - there is ALLWAY somebody that wants extra sauce (me f.i.) - especially if you have potatoes or rice that soak up a LOT - so you need a refill of sauce.

Your idea for cooking more potatoes than you need is an excellent one, now the price of gas and electricity has rocketed. Kept in the fridge for a day or two, boiled spuds can be quickly fried (delicious) or reheated in the microwave, or eaten cold eg chopped, mixed with mayo and spring onions (scallions) and chives etc as a potato salad. Chefs need to bear in mind many people are now very concerned about how dishes are cooked - and for many their use of the oven in particular will have to be rationed. If roasting a chicken costs £11 in electricity, as one lady in England with an electricity meter just reported, that is a nightmare! If I need to roast a meat dish, I will now roast the veg that go with it (instead of cooking them on the hob), and also possibly cook a dessert in the oven at the same time to get best value from the cost. I hope chefs are thinking like we do, as the fuel crisis will really affect the way many people plan to cook, shop and eat! Steak while not exactly cheap in itself, is quick to cook so budget-friendly on fuel. I totally agree with you re sauce - I always make plenty and it's easy to create a delicious sauce from scratch if you have good quality stock/shop bought stock, plus garlic and finely chopped shallots as the base. A few home-grown herbs can improve sauces no end, at little cost - I grow pots outside my back door for convenience, much cheaper than buying them with the weekly groceries. Bon appetite!

@@glamdolly30 Precisely! If you have a roast of beef, there is allways a stump left over! Served as a cold cut with potato salad is allways an option! And a delicious one at that. You could also serve the beef slices with horseradish in whipped cream. But ALLWAYS think of the leftovers there are lots of wonderfull dishes with leftovers! But your idea is in fact a special delicacy for the lunch table - so much in fact, that supermarkets in this country has butcher stores in them, where they roast beef - just to have the leftovers and put them on sale in the cool counter - or cold cut section. There was a semi-famous danish cook that said: NO dish has ever been damaged by cognac or full cream. To the political side: When electricity prices are what they are: Why subsidize wind energy? The windmills make a profit without subsidy - so.... The other thing (and I have a past in water and power utilities) - all the modern gadgets actually use a lot LESS electricity - and the power grids are laid out for a much higher electricity consumption. So the grid has actually been paid for YEARS ago - or rather DECADES. What I particular like is Jean-Pierres crusade against food-fascists. All those narcisistic neurotics that want to convert their hangups to national policy!
