Let me say I am sad after living in Florida for 22 years I never heard about you. Wish I could have gone to your restaurant. As a 53 old male American that ate crap all his life you have been a God Send to me and my family. I have learned so much from you and. So grateful you share these recipes. Hopefully my boys will share your recipes with their kids. And off to this recipe. Very good, No sodium which a good thing. I use the same soy as you as frankly is hands down the winner. Fish came out perfect and was very happy with the meal. Definitely will be making this again. Thank you for the recipe. See you Thursday!

Poaching is highly underrated. I've known many cooks who simply don't do it, and it's because they do not do it correctly. This recipe is genius, and it is simple. I love poaching fish and chicken. Beautifully done... and the Jasmine Rice is a lovely touch.

I just made this... wife raved about it. Said "Is this another John Pierre dish? It has to be, it is fabulous!!" Thank you Chef for giving me the confidence to do these things... know that I am "very precise" in my measuring! Haha... I now trust my palate more and more and not a rote recipe. Yes, I watch his videos over and over not just for entertainment and recipes but for techniques that I can apply to other cooking. My wife is always asking me why I watch the same video over and over sometimes. I'm the cook in the house. I wish Chef Jean-Pierre would have more than just one video a week. Waiting a whole week for these videos is a loooong time. I live in California but if I was in Florida, I would love to go meet him. I love this guy.

you are the best chef tv show ever. I love ur personality and love ur recipes. My first 4 years out of high school I worked in high end restaurants, resorts and golf courses. I was fortunate to work under many excellent chefs and was committed to do an apprenticeship. I even owned a 1000 dollars 4 star Henckel chefs knife kit, a Herings dictionary, and became very proficient at french cooking, sauces, and butchering and preparing all types of meals. However, my father, who is very blue collar, talked me out of it. He said a real man does not work as a chef, and he got me into the construction business instead. I had success over 20 year career, building Wal-marts, retail stores, banks, hospital projects etc. However my career was cut short from knee injuries and lung weakness all caused by construction work environment. It was miserable at times, dirty job sites, seasonal weather, and always working around other men only. If I could go back 28 years, I would tell the young me to keep at it and stay in the restaurant business. By now, I would be running a hotel resort, or own a very high end restaurant, selling over priced wine to stupid yuppies. Meanwhile, this chef reminds me of some of the great personalities I met back in the day in the cooking business.

Thank you for the cool comment! As much as I had a great career and enjoy every minutes of it! I never worked less than 14/16 hours days 7 days a week. I had my restaurant for 22 years and took 60 days off. My cooking school 21 years and maybe took a couple weeks off. The life of a chef is his kitchen and it is very difficult to have a family! So do not regret a thing enjoy you life and enjoy the hobby of cooking! Thank you for watching the channel! 😀

Chef Jean I have been a chef for over 35 years and absolutely love watching your videos and your how you interact with your viewing audience! I love this recipe, the only thing I would do different though is to leave out the corn starch, I just don't like the mouth feel it gives, and instead monter au beurre with that lovely butter that was looking at us, you know how butter needs to be in there! Again thank you Chef for keeping the fun in the kitchen. You know what a 16 hour busy day can do to you unless there is that passion and fun to keep you going! Cheers Chef!!!

Cant wait for the fish and chips video! ....Back in the 70's me, my dad and some friends went cod fishing off the coast of Massachusetts, we had to go out far off the coast because cod likes deep cool water but we used to get a bunch of them. We also got haddock, pollock and other sea life like small sharks...good times!

Well I made this dish. Yes, the sauce was good enough to drink. However, the fish really didn't take on the flavor of the broth. Any suggestions other than cod?

OK, JP. Just made this and it was a huge hit. Changed it a bit. For the broth, I did not have tangerine balsamic. (who does?) Instead, I used an aged fig balsamic (which my monster in law gave me), but less than you did. Also, I added 2 tbs of oyster sauce to the broth along with a homemade chili oil/paste that I have made. Made 3 lbs of cod loins (God bless my fish lady since she asks what I am making and cuts it accordingly) for 3 people and have one dish only left over for my daughter when she gets home from work. Crazy savory and delicious. Thank you, JP! This is now a staple.

A few things: I love that you bought the *quack* brands of soy just to show us what not to buy. I love how surprised you were that the grater worked with the carrots 😂 and I love the recipe, really basic ingredients that I have on hand all the time. This will get made in the next couple weeks. Thanks for this great recipe, and all the others! I tried it today. My sturdy Dutch cod wasn't quite as smooth as yours, but it still fell apart nicely when it was done. We didn't have jasmin rice, so I served it with couscous instead, which I prepared with part of the broth (I had a bit more than I needed). Lovely flavors!

No fish from Vietnam unless they run out pf Cod, Hake, Haddoc etc. dont trust the farmer raising it there😩 Cod is healthy from pristin cold waters, Nort Atlantic 🦈 Love all other Vietmam dishes, French influence 💌
