Chef, I just watched one of your old vids from 1993 that I had watched back in 1993 (Red Snapper in a Papaya Beurre Blanc). I have to admit, although your voice is identical and your techniques are the same - I didn't appreciate your teachings as I do now. I watched all the cooking shows on PBS back in the '80-'90 and loved them. But do you want to know how stupid I was!? My mother was in the next room cooking and slaving over a hot stove for me every day! And I never once thought of going to help or learn from her. I have told her many times over the years, how that makes me so mad I did that! She was and is still is an awesome cook, learning from her mother... All to say - THANK YOU CHEF! More people watched you, listened to you and learned from you than you will ever know! Thank you.

My favorite part is how excited chef gets about tasting his own work. He’s probably made the dish a 100 times and still has the enthusiasm of a child eating something delicious for the 1st time. If I had three wishes, I’d probably use one to become friends Chef Jean-Pierre!

When my oldest son was about 12 we had an electric ice cream maker that you needed rock salt, and ice to churn the ice cream... I remember tempering the eggs... The ice cream was amazing 🍨🍦💜💜💜

When I was a child, we all took turns sitting on the maker's lid and turning the crank. By the time I was in my teen years ny grandfather gave in and replaced the old ice cream maker with a new fangled maker that had an electric motor instead of the crank. It took a while for us to become accustomed to the ice cream after that.

i miss my grandmother's home made ice cream, she only ever made vanilla because it was what my grandpa liked but this brings me back to those summer days when I was a kid and she had the ice cream maker on the counter. That was a special day and it was always way better than the store bought stuff.

This video reminded me of an ice cream I made years ago, but rather than adding chocolate, the custard was heated with about 3 feet of broken up cinnamon sticks which were strained out much the same as chef did. I made it for thanksgiving and it came out so creamy, and it tasted like a cinnamon toast crunch flavored ice cream. I need to dig that recipe out and make it again some time.

Good morning Chef J-P, as you said, we cannot buy Chocolate Ice Cream like this. The stuff we buy is not even ice cream just a mess of ingredients put together and frozen. I always think of the last bit in the box that is melted, the consistency is very dubious. It does take time to make proper home made ice cream but so worth it. Thank you for talking us through the steps, it is an easy recipe to follow and I am sure if we just wish a plain chocolate ice cream we can omit the nuts and marshmallows. It looks delicious. I've only messed around with chocolate, ice cream, and breads. My cousin said I have the knack for bakes goods and he went to chef's school. I'm been planning on making a "Mexican Hot Chocolate" version of Rocky Road, Chef Jean-Pierre just gave me the kick in the butt I needed. Chocolate will bite you in the butt if you're not paying attention to it. If you have some explain to you some basics about chocolate (slow & low heat, no water, and other 2 or 3 "never do this" things) it's not that bad. Cooking isn't hard, you just have to start with simple stuff you like first. The more "advanced" stuff comes as you build your confidence up. First time I mixed things into ice cream I did it at the start, didn't know better. I learned my lesson. Same thing with making breads and what would mess up the yeast. Don;t get discouraged. You never F something up if learn from the experience. :) Ex wife and I had the deal that whoever cooked didn't have to wash dishes.

Compressor powered ice cream makers prevent disappointment. Plus, who has all the space in their home freezer for freezing the mixing bowl? Nonetheless, Chef JP is #1 A+.

Have to agree, free space is usually at a premium in my freezer. You can fill the mixing bowl with items already frozen in your freezer - if anything it might get the bowl to freeze a little quicker.

I just watched a pbs sunshine cuisine, fillet with wild mushroom & rosemary potato. I truly enjoy watching and learning from you. It is a refreshing fact that you have not changed anything you do. I make my own banana ice cream for my banana split dessert and I put a baking tray in the freezer and when I'm ready to take the ice cream out of the maker I put the container or molds Im using on the cold tray, it helps keep it cold so it doesn't melt as quickly.

I would love to see a video on banana ice cream, I can never get it to taste how it does when you put a fresh banana with vanilla ice cream in a milkshake without it turning slightly bitter 😢. I do make a toasted marshmallow ice cream that I'm pretty proud of, I put a scoop on a cinnamon Gram cracker and put a melted chocolate ganache shell on top, it's like a fancy frozen smore.

@TheEndsMeatShow I use Thomas Keller's method for "poached banana ice cream". Give it a try. My banana split is a Frankenstein dessert I put together from different recipes. My "StellaR Banana Split" is made up of a banana muffin slice with a thin layer of salted caramel ganache, banana maple cremeux, small banana ice cream spheres drizzled with warm chocolate sauce. It took some tweaking to get it right for me and it uses recipes inspired by 5 different chefs, but has turned into my most requested dessert from my family and friends.

This was a good one! I remember making vanilla ice cream as a kid with my uncle at thanksgiving times in the old churns. Not as elaborate as your chocolate ice cream but the recipe is simple!

Excellent recipe chef. I'd recommend you check out the Breville ice cream maker. It utilizes a compressor and does not require pre-freezing the bowl.

You are right it is a very good ice-cream maker but it is about $500. Most people cannot afford it (especially in today economy) . I try to find the best machine for the least amount of money! 👍❤️

Rocky Road Brownes were my specialty when I was in 4H baking. I was that kid that was baking while the other boys were raising livestock 😂 I ribboned in my age group at the Indiana State Fair. I think Red or White ribbon

That's an excellent idea there---using a ladle to help push the chocolate mixture through the sieve. Its convex shape fits the contours of the sieve, avoiding misshapening the mesh with a spoon or other implement that applies too much concentrated force.
