INDORI POHA
Preparation time 5-10 minutes
Cooking time 15-20 minutes
Serve 2-4
Ingredients
For Tadka
1 ½ tbsp Oil, तेल
½ tsp small Mustard seeds, सरसों के बीज
½ tsp Cumin seeds, जीरा
½ tsp Fennel seeds, सौंफ
2 no. Green chillies, chopped, हरी मिर्च
2 sprig Curry leaves, करी पत्ता
¼ tsp Turmeric powder, हल्दी पाउडर
A pinch of asafoetida, हींग
For Indori Poha
3 cups thick Poha, पोहा
Water, पानी
Prepared Tadka, तैयार किया हुआ तड़का
½ tbsp Sugar, चीनी
Salt to taste, नमक स्वादअनुसार
2 tbsp Milk, दूध
Other Ingredients
Water, पानी
2-4 no. Green chillies (less spicy & slit into half) हरी मिर्च
For Jeeravan Masala
1 tbsp Fennel seeds, सौंफ
3 tsp Cumin seeds, जीरा
1 tbsp Coriander seeds, धनिया के बीज
1 tbsp Black peppercorns, काली मिर्च के दाने
6-7 no. Cloves, लौंग
1 no. Mace, जावित्री
¼ inch Cinnamon stick, दालचीनी
6-7 no. Bay leaf, तेज़पत्ता
10-12 Green cardamom, हरी इलायची
3-4 no. Dry kashmiri red chillies (broken into half) सूखी कश्मीरी लाल मिर्च
¼ Nutmeg, जायफल
Salt to taste, नमक स्वादअनुसार
2 tsp Pink salt, काला नमक
2 tsp Ginger powder, सोंठ पाउडर
A pinch of turmeric powder, हल्दी पाउडर
¼ tsp Asafoetida, हींग
For Masala Peanuts
2-3 tsp Oil, तेल
½ cup Peanuts, मूंगफली
¼ tsp Degi red chili powder, दगी लाल मिर्च पाउडर
Salt to taste, नमक स्वादअनुसार
For Garnish
Prepared Poha, तयार किया हुआ पोहा
Masala Peanuts, मसाला मूंगफली
Green chili, less spicy & slit into half, हरी मिर्च
Ratlami sev, रतलामी सेव
Masala Boondi, बूंदी
Nylon sev, नायलॉन सेव
Pomegranate pearls, अनार के दाने
½ tsp Prepared Jeeravan Masala, तैयार किया हुआ जीरावन मसाला
Coriander leaves, chopped, धनिया पत्ता
Lemon wedge, नींबू की फांक
Jalebi, जलेबी
Process
For Indori Poha
In a bowl, add thick poha, water and rinse it.
Strain the water and keep it aside for further use.
For Tadka
In a pan, heat oil, add mustard seeds, cumin seeds, fennel seeds and let it splutter.
Add green chillies, curry leaves and toss it well, turn off the flame, add turmeric powder, asafoetida and mix it well.
Pour the Prepared tadka on the soaked poha, add sugar and give it a good mix.
Add a little milk and mix well.
Keep it aside for further use.
For Steaming Poha
In a kadai, add water and place a plate on top of the kadai.
Add prepared poha, green chillies and let it steam for at least 15-20 minutes on moderate heat.
Transfer it to a serving dish, garnish it with masala peanuts, green chillies, ratlami sev, masala boondi, nylon sev, pomegranate pearls, sprinkle prepared jeeravan masala, coriander leaves and lemon wedges.
Serve hot with jalebi.
For Jeeravan Masala
In a pan, add fennel seeds, cumin seeds, coriander seeds and dry roast it for a minute on low flame.
Add black peppercorns, cloves, mace, cinnamon stick, bay leaf, green cardamom, dry red chillies, nutmeg, salt to taste and dry roast it well.
Add pink salt, dry ginger powder, turmeric powder, asafoetida and toss on low flame.
Transfer it to a plate or tray to cool down at room temperature.
Transfer it to a mixer grinder jar and grind it into fine powder.
Keep it aside for further use.
For Masala Peanuts
In a pan, heat oil, add peanuts and roast for 2-3 minutes on moderate heat until golden in color.
Transfer it to a bowl and strain the excess oil.
Sprinkle some degi red chili powder, salt to taste and toss it well.
Keep it aside for further use.

Before coming to indore I thought that Idli Sambar and chole kulche, is the best breakfast in India, but after having indori poha i realized that indori poha and jalebi combo is no where less than anything else in this world❤❤

I am Chennai, I went to Indore in 2001, thats the 1st time out of southern part of India. Reached morning Indore railway station and hungry took breakfast Poha. I didn't like it, but due to budget Poha has been my breakfast. within week i started enjoying Poha and masal chai in mrng, Poha and Jelabi in evening. Every year i visit indore city for business purpose, i never miss Poha. ❤❤❤

Finally, 😃😃 most awaited recipe. 😃😃Being from Indore, I can tell you, from today, all Indooris will love your channel. Poha + Jalebi = Indoori 🤣I think this Dish and mostly the combo defines all the people from M.P. but trust me, every Gali has its version, and all versions are the best. I loved the little history you mentioned about Indore. It makes me miss home and Indore the most.

I have eaten famous Indori poha in ujjain 4 years back, its so different and even in Rs. 20 they give lots of quantity :) .Thank you RB ji for bringing traditional poha from MP. I will try this at home. and your background music selection is so WOW i like it.

I helped my mom and we made this recipe. We live in Mumbai and usually eat Poha the "Maharashtrian" way. But when we tried this for the first time, we were blown away. I have been making Poha since few years, however never tried this Indori styled poha. Fortunately, I got to attend an SSB in Bhopal and had this lip smacking breakfast. The salty-spicy and sweetness from combination of Poha Jalebi was something my taste buds will always remember.

पोहे has come from जळगाव to इंदूर, the founder of प्रशांत came to इंदूर from जळगाव to इंदूर for education, after his completion of education could not understand what to do not getting job, so he started पोहा with his unique style on steam thela started those day's one Mr.Damu Anna use to sell बटाट्याची भाजी, I know this history because my father was working in होळकर State Arms फोर्स. Absolutely exquisite, the way you explained the essence of Indori & Gwalior POHA. Thanks Chef RB ❤ Like you, I am married to a Marathi wife and Poha is always made at home. I just loved it. But the flavours of Indori Gwalior POHA is unique. There's also the Nagpur version of POHA which is served with a spicy TARRI (gravy) and finely diced raw onions. I love POHA in all its different avatars😋😋

Amazing recipe chef! A little chopped onions and kacchi kairi in the garnish is something I love. Very few people refer to the charkhi boondi in the recipe, reminded me of back home :D

I am Indori. My mother cooks delicious pohe, but the taste has always been different form the pohe stalls. I am currently in USA and came across this video and made the pohe exactly described. DUDE...!!!!!! BLEW MY MIND It tastes exactly the same as those indore food stalls. I'm getting homesick after eating this. Thanks for the memories Ranveer.💖

I had my college memories with Poha, during my college from LNCT bhopal, I used to have this tasty POha & Jalebi everyday in breakfast. I am from Balaghat, Madhya Pradesh (south east of MP) and i have never heard of this poha. Poha is prepared once or twice in our home but we never ever preprare it this way. We are natives of MP but we usually eat kanda poha and tarri poha

Mujhe khana banane me kbhi interest nhi raha h, sirf khane me interest h, lekin ab to shadi hogyi so sasural me banana hi padega, lekin aapke hi video se inspiration milta h mujhe. Aapke staff wale kitne lucky h, unko roz shoot k baad aapke hath ka khana milta h.😅

I always watch your channel and like the way you cook recipes giving all the knowledge related to ingredients...You are great teacher ...most of the chef's shows their recipes but the way you explain it it's very different and make any viewer believe that they can also cook well...with the help of all the attention to detail and purpose of the ingredients...I am foody as well as fond of cooking I have been watching many you tube videos of different chef's and people but the day I came across your teaching style it really liked it and very encouraging for new cook who recently started cooking...keep up good work God bless you... Wah Ranveer paaji. As someone from Gwalior who spent his childhood eating Poha from a thela everyday, I really enjoyed this recipe. Rani Laxmi Bai colony ke Pohe-Jalebi, Hemu ji ka Cheela, Samosa, SS Kachori wala ki kachori/ Bedhai, Bahadura ke laddoo were my all time favourites :)

My god, i love my tadka poha with onion nd all, lekin Jab mai indore mai tha towards Ujjain, sarvatte bus stand ke samne Jo poha khaaya tha...That was the best thing ever in the morning...Those Rajwada street food especially Shaam ke time ka ragulla was...bliss Loved indore Soo much..will try to explore more

Indori poha is incomplete without sev nd jeeravan. Since childhood I loved poha this is the same recipi which is served here in every shops in MP nd in 56Dukan, Indore. I belong from Kolkata, West Bengal. But I was brought up in Dewas and still live here (Near Indore, M.P. region)
