In this video, I will guide you through:
🌿 Preparing the special black spice blend for the bhaji
🍅 Cooking the vegetables to a perfect, rich consistency
🧈 Adding the luxurious taste of President Butter
🥖 Toasting the pav to golden, buttery perfection
👨‍🍳 What you’ll need for the Black Masala:
1 tbsp coriander seeds
1 tsp fennel seeds
1.5 tsp cumin seeds
1 tsp black peppercorns
8-9 cloves
1-2 bay leaf
1-2 star anise
5-7 gms cinnamon stick
4-5 cardamom
1-2 black cardamom
1-2 black stone flower
50 gms sliced dry coconut
Other Ingredients:
250 gms President Salted Butter
2 tbsp chopped onion
1tbsp chopped ginger
1 tbsp chopped garlic
2 chopped green chilli
1 medium capsicum finely chopped
2 finely chopped tomatoes
1 medium-sized diced carrot (blanched)
80 - 100 gms cauliflower (blanched)
1tsp red chilli powder
1 tsp garam masala
1 cup green peas ( blanched)
4 medium-sized potato
1/2 cup tomato juice
3 tbsp black masala
1 cup water
Salt (as per taste)
Chaat Masala (as per taste)
Method
Step 1
• In a pan on medium heat, dry roast bay leaf, fennel seeds, cardamom seeds, cloves, cinnamon stick, star anise, cumin seeds, and coriander seeds till you get a nice aroma. Be careful not to burn the ingredients.
• Char the dry coconut over an open flame till it is black from all sides.
• Cool it down & transfer this to a grinder with 1 tablespoon of Black pepper powder.
Step 2
• In a pan take 50 gms of President butter & add chopped onion, ginger, garlic & green chilli.
• Add green capsicum, tomatoes, carrots, cauliflower, chilli powder & garam masala with another 50 gms of President salted butter.
• Once the vegetables are sautéed, add potato & peas, tomato juice & the black masala. Top it with water & of course some butter. And MASH!
Step 3
• Toast the pav with butter, to make it crispy and enjoyyyyyy!
