Yes, it's Sooo Good, and it can easily be turned into any Clam or Seafood Chowder, instead, by simply swapping the meat and the broth! ;-)

Man, you had me at Blackening Seasoning ! I use my Creole Seasoning on darn near everything! I really like your thigh cooking technique. I used to cook thighs in a sauté pan alone, but found they need more time to render the fat. On a cold road deployment, we had corn chowder upon arrival to an Army base. Nothing soothes cold weather like a creamy chowder! Perfect dish for the chill now!

I love how you have kosher salt and pepper in the same shaker. Did you blend this yourself or buy it premade? If you blended it yourself, did you use course pepper? Also; what ratio? Thanks! Can't wait to try your recipe!!

It is course black pepper and I do blend it myself. Usually a 50/50 ratio. It's really convenient and quick for seasoning in large quantity meats. I just use a Parmesan Cheese shaker. ;-)
