Good job Mike. That looked real tasty. Good to see parts of a harvested animal being used that are normally discarded. We do it justice by eating as much of it as we can and not wasting anything. Those feet will have lots of cartilage and flavoursome gelatinous meat with lots of collagen which is very healthy.

I started having the feet pressure cooked, and flavored and blended then cooked again strained and the liquid makes a gel. One spoon full (mixed into my food) does not have a bad taste no gettin used to its good!

Oh geez did this bring back some memories for me! The one and only time I ever saw someone eat a chicken foot other than video now. My uncle's mother in-law. She cooked some rice with chicken stock I'm sure she made, and had some chicken feet in it. Well I'm like 12 yrs old and Clewiston, fla transplant to south GA for a year in the early 1970s...I grew up on drumsticks, never heard of eating feet. I could never bring myself to try them, and yet to do so at 61. However, I've watched lots of food videos and seen lots of people eating them worldwide. If I ever take the plunge I'm coming to Jamaican Mike and asking for a dish of this! Nick, I really liked this one, J Mike that was awesome prep and teaching.
