Lots more black pepper. And a splash of red hot sauce. You’d be amazed at what a drop or two of hot sauce will do for flavor.

I'm strapped in for another gravy train ride to culinary nirvana here because I love chicken fried steak and this is gonna be an amazing gravy I just know it!!! And guess what I was correct this is a sublime looking gravy and oh well looking at the final picture of that steak my mouth isn't just watering its gushing😋!!!! My standard for that and other gravy is to deglaze with a touch of red wine, and I'm a sucker for a just a tad of curry and brown sugar.

What about the fond left in the pan?

The meat was fried in deep oil not sautéed. So there was no fond on the pan. The only thing in the pain were burnt bit which would only add a nasty burnt taste.

Why use milk and cream? It would be simpler and more consistent to use 1/2 and 1/2. Also, the oil from the frying can have burned bits in it which sour the oil. Plus, the oil just doesn't taste very good (or is that a Southern thing?). I use butter and add fresh spices if desired but usually just salt and pepper are needed.
