Shape the fillet by cleaning it and cutting off the excess. We salt the meat with sea salt and leave it to salt for a day. Then we wash it and we will desalinate it for 6 hours in cold water with limontozu. After 3 hours we will change the water with clean one time and continue the desalination. Then we will dry with kitchen paper. With a string and a large needle we pierce the meat so that it is ready for hanging. We will leave it to dry in a dry and ventilated place for a week.
