Back in my corporate days, my team frequented a fast-casual lunch spot in the downtown Minneapolis skyway for the most craveable hummus bowls with the freshest, puffiest pita bread I've ever tasted. It was one of my favorite lunches - life seriously doesn't get better than a bowl of creamy, dreamy hummus piled high with all kinds of toppings!
Eventually I figured out how to recreate it at home, and this Chicken Shawarma Hummus Bowl recipe is the result! It centers around my go-to sheet pan chicken shawarma, which is seasoned with the most delicious homemade spice blend and roasted-then-broiled to create the juicy-yet-crispy texture that makes authentic shawarma so craveable.
Simply load it into a bowl over a big swoop of creamy hummus and whatever fixings you love, like grains, lettuce, fresh veggies, and pickled red onions for a colorful, flavorful, & fresh dinner for any night of the week!

That’s such a good point about not wanting to steam the chicken. The seasonings sound so good I would have normally poured every last bit of marinade over the chicken! I cannot wait to make this!!
